Just to let ya'll know, the roast beef hash was a success with me and Cary, both. I'll need to tweak it a bit next time, but it was good. It was a little dry by the time it was warm through and through, so I'll add a bit of beef broth. It also needed more flavor, so I'll add even more Worcestershire sauce and garlic, salt, and black pepper. It's a keeper, though, lol!

So glad it turned out so well for you. Don’t you just love to use leftovers in ways that not only taste good but stretches the budget!? I used my leftover roast, potatoes and carrots last night and made vegetable beef soup, all I added was one cup of water and a beef bouillon cube and a .99 cent bag of frozen vegetables. Fed 3 adults with cornbread for supper and enough for DH and I for lunch.

I use my leftover steaks and roasts to make beef veggie soup..usually throw some beef broth in the pot with chopped onion, green pepper and celery...and the leftover beef and a handful of barley...I keep Del Monte...canned mixed veggies in the pantry.. usually throw in a couple of cans and at the very end add can of diced tomatoes.. make biscuits or cornbread on the side..we most often get two or three more meals out of the leftover beef..
