Ace Hardware’s ad has canning jars on sale. 1/2 gallon jars are $10.99. I haven’t been able to find them anywhere, so I’ll have to heck it out.

I think I am done doing pickles and green beans. I will keep canning tomatoes since i did not have many carry overs from last year. I am still drying squash and cucumbers. I am thinking about planting a fall garden. We got about 2 inches of rain in the last couple days.

We have added more to the pantry. I am running out of room to stash it. Still no canning lids to be found in our area. I am considering ordering more Tattler lids. I have some. I also could use more rings. I have had to throw some away because they were rusty. I have been using them for years.

I ended up ordering four more bras yesterday. I thought I had plenty, then I had two give out on me in the same week, so I decided I would rather be safe than sorry! I'm a big woman, so I am picky about the bras I wear and can't just pick something up off the shelf somewhere and be happy.

One thing, hard to imagine LOL, that I've forgotten to stock up on has been a/c filters. DH didn't seem to be the least concerned (he would if he had to clean the old ones) so I ordered 12 and used his cc, I can't pay for everything. Got them from Amazon. I cancelled my prime at the beginning of July, but have continued to order from them because they still have free shipping with a $25 purchase. The prime shipping had gotten slow and the free shipping is even slower but a penny saved is a penny earned.

I know there are other things that I've forgotten although I go over everything in my mind to try to keep up with it. Yesterday we were going to get some more of the big tanks and had a blow out. DH had a decent spare but was a little low. Since we usually buy our tires at walmart, and they are not doing anything at walmart in the automotive bays, DH ordered two that are supposed to be delivered Tuesday. Fortunately he is quite adapt at putting on new tires.

If anyone is short on pint canning jars, you might want to check out Lowe's. I was there yesterday, and was stunned to see two pallets full of them just inside the store by the garden center. I think they were around $9 a case. Really surprised me!

I received three giant king salmon. They are beautiful. God‘s bounty. I will get them cut up asap.

i admired my handy work. The forest I planted in last few years is healing the land, where several acre gravel operation existed. Trees and grasses are growing.

I really should start a thread about this so as not to derail too much but I’m getting my first, half hog order in three weeks!
My cousin, who raised the hog messaged me so we talked on the phone last night about the details.... I still am trying to figure it all out (newbie ! Lol)

I don’t have room for the extra odds and ends but I do have a large extra freezer in the basement which is why I ordered the hog meat.

She says I need to get “my list and order” ready for her so she can give to the processor.
I only want these:

Bone in pork chops
Bacon!
Tenderloin roasts
A few butt roasts-smaller packages

I’m thinking about skipping the ribs due to space and would almost rather have extra chops instead of ribs. Hub might disagree though, but at this rate I’m slready going to be doing some creative “rearranging” to fit in what I positively want! We rarely ever eat ribs but do love them.

She said this will all come already wrapped and should fill two large coolers to get it all here.
Does this sound like a good plan, or any of you have thoughts about your own experiences?

( one thing cousin did mention that has me curious is “jowl bacon”... I ha e no idea what that tastes like?....should I skip that?)

I would think you should just call the processor. Here they have a check list that they use. And they can tell you about different cuts of meat. They are very helpful here.

You are buying half a hog. But you say you don't want all the meat. That will increase your meat cost by pound if you have to pay for 1/2 a hog but only take part of the meat. What about ground pork? It takes up less space.

Also you only can get as many chops as is on your half. There is no way to trade your ribs for chops. An animal carcass only has what it has.

Oh yeah I forgot!

Sausage and ground pork is on the list.

Maybe I should just leave well enough alone and take what’s there. I don’t want a lot of pork butt, though. Oh well.

We raised our own pigs for a few years and were never able to get much more than pork steaks and ground sausage. The small processors around here don't do bacon and for some reason the ribs never turned out well. We got bone in steaks from our last big pig (over 300 pounds) and the meat was so tough that it was almost impossible to eat. The pig was at least 3 years old and I'm sure that was why it was so tough. The two wild pigs we got processed we just got ground pork and I mix that with ground venison when I cook anything with ground meat. We got out of the pig raising business because we could never sell any and after 5 years it was just too expensive to feed them out. Last year we ended up with 18 babies between two sows because wild boars hopped the fence. DH Put out a sign "Free Pigs", and we even got rid of the sows. It was hard for me to get rid of the girls because I had become fond of them. But we still have the wild pig issue and we can still put pork in the freezer.

Good luck with your half hog, I bet it will be delish.
