We made it to 2017 - Woo-Hoo!! :eleph: Happy New Year, All!!

How are you folks going to spend this wonderful day?

Hubby worked last night (poor guy - NYE is not a fun time to be the booking officer!) so will likely drag in the door around 8, have breakfast, and haul himself upstairs for a shower and a nap. While he's napping, I plan to prep for our traditional New Year's dinner - I'll grab a corned beef brisket out of the freezer and put it in a pan of cold water to thaw; then rinse the black eye peas that I boiled and set to soak overnight and put them in the crock pot with some onions and other seasonings (including a little bit of chopped hot peppers), and set them to cooking. When Hubby is about ready for supper, we'll toss the corned beef in the pressure cooker and cook it; when it's done, we'll lift it out and add some potatoes and carrots to the broth; then top it with wedges of cabbage and cook them while the corned beef cools enough to slice. A pan of cornbread slid into the oven will be all we need to accompany the meal :)

The dishes are soaking in the dishpan - my hands will be happy to be soaking in the hot dishwater here in a bit! Once I'm done with that, I need to go out and fill my birdfeeders and hang the suet feeder I picked up yesterday when I got off work early. I need to carry out the compost, take the trash to the bag in the shed; and while I'm in the shed, I need to look for a small bag of potting soil that I'm sure is there - if I can figure out where Hubby stashed it :lol: I've got a rosemary plant and a poinsettia that need repotting; plus I want to take some cuttings of thyme and see if I can get them to root - it's stayed alive and green through temps down to 2*F but I want some fresh in the house to use during snow season.

Once I get the black eye peas out of my big pot and get it washed up (my daughter makes fun of me for 'warshing' the dishes lol!), I want to pick over the three bags of Great Northern beans I snagged at Aldi on my way home yesterday - not only did we somehow run out of tuna, we ran out of home canned pork 'n beans as well!! I'll bring them up to a boil, then let them sit overnight to soak before canning them tomorrow. My pork 'n bean canning recipe is hit and miss -
fill the jar 2/3 of the way full of beans and add a heaping teaspoon of dried onions (or dried onion and pepper mix; depends on what comes to hand first in the cabinet lol!). Then mix some homemade or store bought catsup in the with the soaking water from the beans that's been brought up to a boil; add a few heaping spoonfuls of season salt and stir it up well before pouring it over the beans in the jars. Top with a chunk of salt pork or bacon before wiping the rim of the jar and adding lid and ring band. I can the pints for 70 minutes; quarts for 90 minutes.

Sometime while Hubby is napping, I need to run to town to drop off the boys' thermal swimsuits as daughter and family are leaving on vacation tomorrow and will need them. I'm wondering if I won't come back home with two little boys in tow so that their Mama can get the laundry and packing done with minimal 'help' from them :lol: While I'm in town, I'll stop at the local chain grocery store that my work Buddy gave me a store coupon book for and pick up a few of the sale items - Smithfield bacon 12 oz for $1.99 (guess it'll be bacon going in those jars of beans), Skippy peanut butter 15-16 oz jars for $1.49, limit 2; and I have 75 cents off 2 coupons, so $1.13 jar after coupons.

Aaand now it looks like I have to go sort through the tubs of summer boy clothes that I put away last week - daughter needs shorts to take on vacation!

I cheated with the beans for New Years, I used canned. DH likes great northerns and I like blackeyed peas. I browned some thawed out pork steak and put some in two pans, one for him and one for me. I added a can of fire roasted tomatoes to the Blackeyed peas, along with 6 frozen brussel sprouts. DH probably wouldn't eat brussel sprouts if he was starving, LOL. New years food was taken care of.

Friday I got my monthly subscribe and save, I'm trying to cut back on what I spend, so it was only enough to get the 15% discount. A little bit every month adds up.

Went to church this morning, then spent the day catching up on a few things. Made some blackeyed peas, collard greens, and cornbread for dinner. This afternoon, I put my crackers I bought at Aldi in quart jars and sealed them with my vacuum sealer. I don't put oxygen absorbers in the jars, just crackers and seal. They then go in the pantry until they are used. I try to keep everything in the dark and cool.

I work the next 3 days, and my goal is to only buy 1 refill of pop at work per day. That's only 25c/day, if I can manage it. My goal is to save up at least $1000 for a botany class in May, then start saving $3000 for my basic herbal class. Sounds like a lot, and quite truthfully, I don't know if the education I get will translate into income or not. I saw an internet meme the other day about how God gives you a task to trust your faith, not your bank balance..... Guess I need to challenge my faith a little!

Good Morning, All! Hope this finds everyone recovered from New Year's Eve and the 1st! No partying here - I was in bed early both nights; and Hubby was snoozing in front of the TV when I headed upstairs. Those young girls that he works with on night shift have him hooked on 'The Walking Dead' and apparently there is some kind of marathon this week because I have been hearing zombies slobbering every night to the point I'd rather just go upstairs and read :lol: I will be glad when he returns to his summer job in March - he takes extra food in his lunch to feed the girls, and while I don't begrudge them so much as a bite, HE'S gained a size in his jeans and I'm not buying him new ones until those ones wear out!!

This morning, I cleaned out my purse and took out all the one and five dollar bills to save; was that your idea with the 5's Binwa? I think that I saw it on Facebook as well. I've saved up one dollar bills for years and used them during Christmas time to put in the Salvation Army kettles; I was pretty disappointed in myself when I opened the tin I save them in and found 5 bundles of bills still in there ($50) - and since some of the 1's in my purse were still fastened together with a paperclip, they were for the kettles too. I guess I didn't shop as much this year - and didn't have the kids with me when I did - "More dollars, Meem!' the little one will tell me when he sees a red kettle :lol: I didn't see as many kettles out as I usually do, either... My co-worker friend that runs a church based food bank tells me that there is a greater need for donations in January than during the holidays as a lot of organizations will call and offer to provide certain items then; and everyone is busy dealing with bills in January. I think I will leave the ones in the Sally's can, and write co-worker a check for her food bank; I'll call it my penance for not making sure my Red Kettle money got put in kettles this year.

Plans for today include going to aqua aerobics with the neighbor ladies in about 45 minutes. Once back home, I need to fill my birdfeeders, then I plan for Hubby and I to deep clean one room of the house - not sure if it will be the utility room or the kitchen, although I probably need a day or so to putter around in the kitchen before we start in there as I need to take all the stuff off the bulletin board and file or shred it, get all the cards and pictures the kids have drawn off the fridge and in to my scrapbook, and get all the groceries that are cluttering my island counter put in the pantry...

I was a total slacker yesterday - didn't get the beans soaked for canning, etc... so I'm going to ask Hubby to bring them to a boil and leave them soak while I'm at aqua aerobics; I should be able to can them this afternoon. I also need to get my van cleaned and vacuumed inside, and get my winter emergency kit put back in now that I've gotten it buffed and fluffed for the year :lol:

And the other ladies will be here in about 15 minutes, so I reckon I'd better get this posted so I can pull on my swimsuit and be ready to go!

I was going to save $1 this year, but I don't really keep much cash in my purse anymore, I'm just going with change. I let money build up in my bank account and every couple of months take cash out and stash that. I know this will sound weird, but I'm trying to save up enough cash to cover my final expenses since I don't have insurance for that. I'm close, and when I reach that goal I'll just keep stashing it away for emergencies.

That doesn't sound weird, Judy; it sounds resourceful, and thoughtful of your family.

I did make it through aqua aerobics, and managed to get two canner loads (14 qts) of pork 'n beans canned yesterday, except we forgot to put the bacon in so I guess they are just beans in tomato sauce :lol: The rest of the day was pretty much a wash for getting anything done around home other than laundry - and I still need to wash the rugs and grandson's sheets - and dithering around.

Hubby wanted some new work (cargo) pants for his summer job - wanted them bad enough to pay for them out of his money lol! - and was about to order some online from Rural King when I pointed out that they had a 20% restocking fee for returns, and wouldn't it be a good idea to drive over and see if the pants were actually what he wanted - if they had them in stock, of course. I needed bird feed anyway, so off we went. He did find the pants; he did need a different size than what he wears in jeans, AND they were cheaper in store than on the website so that was a plus. I got my bird feed loaded in the cart, then went to look for those propane heaters I've been pushing him to buy - they only had one of the type we want, and the box was damaged on it. I pointed this out to him as a warning that we can't always count on being able to get what we need, when we need it. I'm hoping that it sunk in, but sometimes he does take a day or three to think about things...

Hubby needed to pick up a 'script, and I wanted to check out the Christmas clearance at CVS, so we headed there. Another 'don't count on it' thing happened there when his 'Benny' card didn't work for his 'script, so he paid out of pocket. I have another chiro appointment this week, so I'll call HR sometime while I'm at work today to see what the snafu was. Another weird thing was that the price of his med was only $2.36 - it's usually a $15 co-pay with our insurance...

While he was waiting on his 'script, I hit the clearance aisles where Christmas items were marked 50% off, and did find two wreaths to use in the cemetery next year. Only other thing in that aisle I found was 4 dark chocolate covered marshmallow Santas for Hubby (Yes, I was the one griping about him gaining weight lol!). A dear friend had alerted me to a sale on Boost so I popped in to that aisle next - only one carton available in the flavor Hubby likes but I have all week and will be going past three different CVS stores in that time, so will have time to finish out the deal. I also snagged another bottle of Centrum vitamins, 2 regular size pkg of M&Ms (will donate as Bingo prizes at work), and a gallon of milk. So here is how the deal worked out (I rounded prices up by a penny for ease of math - it is 04:30, after all lol!):

Well, my alarm went off; guess that's my cue to get up and start getting ready for work.... today, tomorrow; Saturday & Sunday; then I'm on vacation for 11 days - should have been 12 days, but Boss conned me into coming in on the 19th when he absolutely couldn't get coverage - for an as yet to be determined bribe :lol: He tried to con me into the 20th as well, but I plan to stay home and watch the inauguration, so that was a no-go!

ReneeT.. I read your weekly posts and feel I need a nap when I'm finished :lol: Maybe its due to being sick the last couple of weeks but youre like the energizer bunny compared to me & my weekly accomplishments! lol
Oh and yes I have been putting a weekly $5.00 cash away. I do it for an emergency in mind. I will just keep adding to it weekly & letting it build. I just don't want to be in a situation where I cant use an atm or the ONE gas station in town for whatever reason I couldnt use the debit card for gas etc.. along with adding weekly to the food storage for any unforeseen emergency, its there too.
I'm SO jealous of you gals with the CVS. Your deals seem so much better then our walgreens. You did great on your deals!

It's snowing to beat the band here. So glad I have the next few days off - today was slow for me, but I don't think it will be for night shift! Tomorrow, I plan on putting away Christmas decorations (at least boxing them up, even if I can't get them back down to the storage trailer), re-organizing my pantry, and working on making some salves. I have herbs to do some wound healing and muscle rub salves, I just need to get the infusions made, then the salves.

Managed to get my infusions started - I'm doing 3 (skin healing, muscle rub, and arthritis rub). They will need to go the next several days for the oil to be strong enough. Then I'll decide if I want to leave them oils or turn into salves. Leaning toward salves, as the oils can get rancid, and salves if properly stored can last 5 years (I'll add a few drops of grapefruitseed extract to be sure). Haven't touched the decorations yet, maybe later tonight. I got my herb blends from Bulkherbstore.com. The salve kit really has a LOT of herbs!

Started working on organizing one of my pantries - it's gonna take a while. I did get a menu planned out so I can use up what's in the fridge before any more goes bad. Tonight, we'll have beef and mushroom gravy over mashed potatoes and broccoli with Hollandaise sauce. Tomorrow, pancakes for breakfast (we need to use up some syrups), then vegetable beef soup with biscuits for lunch with a dessert of apricot cobbler. Supper will be stuffed peppers and cornbread muffins.

I found some oranges in my pantry about to head south, so I zested the peel, and juiced them. I got about a pint of OJ. The zest is drying next to the woodstove, and I put the rest (white pithy parts) in a ziploc bag and in the freezer. I might throw them in the kettle we keep on the stove to freshen the house a little, or use them in cleaning products (I'll have to look online to see where I saw that - I think it was citrus rinds in vinegar as an all-pur-pose cleaner).

Kitty litter was on sale as a BOGO. We always do the happy dance the two or three times a year that happens. We got 20 of the 20 lb jugs of Tidy Cat. That brings the inventory back up a bit. Never can beat half price. Publix also had a coupon to get a $50 gas card for $40 when you bought $50 worth of groceries, so I took advantage of that. They do that regularly, and I always try to take advantage. A 20% discount on gas is a good deal.

Started at the tax office this week with meetings and training. Not on the schedule for next week until Saturday. I'm only going to be doing about 10-12 hours a week there this year since I have a full time job elsewhere this time. Money from tax season will go toward the vacation fund. I'm turning 55 next March and want to take another trip on my bucket list.

There was nothing on sale to get excited about, which is good. We had to call the plumber and have a leak that goes into the back wall of the kitchen, which is concrete. It will cost about $1k to get fixed. That is already in the home fund (the house is paid for).

Managed to get the Christmas decorations boxed up, but there's a bit too much snow to get them back down to the storage trailer. DH vacuumed the carpet (live tree),and I worked a little more on the pantry. Found some stuff I need to get used up. DH and I discussed the plan for the garden this summer - I'm thinking very small (about 1/4 acre or smaller). Working on it while working and trying to go to school I think will just be too much. We talked about me doing a canning CSA, but again, with school I think I just won't have enough time.

Found some carrots starting to freeze in my canning kitchen, so I peeled and shredded them, blanched them, and now they are in the dehydrator. I need to check my onions and cabbage I have stored as well. No sense in letting it go to waste.

I accidentally clicked on the Home Shopping Network and they were sell some folding heavy duty shelves, three shelves high, with a good amount of space between each shelf. They come with two and I bit the bullet and ordered them and they were delivered today. They will take the place of two kitchen carts in my office, being narrower and a little longer they will take up much less space, but since there is a good amount of space between the shelves they will be much more efficient. DH raised an eyebrow but didn't give me a hard time.

Also I'm really taking my decluttering to heart, I'm doing a daily declutter program: Management 101 on facebook. It started this week and week 1 is the kitchen, I've decluttered my counters, and 4 junk drawers and they all look so nice and clean. I've got three boxes full of things to get rid of and I've not even started on the inside of the kitchen cabinets. Plus while I'm working in the kitchen I'm also working in my office, trying to get rid of all the ebay stuff.

We keep our kitchen table in the mud room DH office combo, just no room in the kitchen for it. Its all cleaned off with a nice little center piece. Its a big room, also contains our wood stove. Since we live in the sand hills of north Louisiana, most of the sand stops in that room. Its almost impossible to stay ahead of the sand.
