I have smoked sausage on my walmart list on my phone, several packages. I had one package in the crisper drawer in my fridg that I had forgotten about, I did catch it in time before it spoiled. We don't actually eat it regularly, but its nice to have on hand for something fairly quick to cook.

Cary loves smoked sausage (Polish Kielbasa) and kraut. I try to keep lots of it in the freezers. We like them grilled out back during the summer, too. It's usually grilled smoked sausages, homemade German potato salad, and garlic bread. I also use it with my homemade Cajun red beans and rice recipe.

edited to add......I only make anything with Polish Kielbasa once every couple of months. It's not something I make for Cary every other day. I also limit the number of times I fix bacon, as well. I've been watching his low cholesterol diet even ,before his doctor told him to.

Mostly I use it with cabbage, southern cooked cabbage. DH is on a blood thinner so we don't eat it regularly. I don't think we have grilled outside in years, I guess its just not our thing.

Hubby has HTN and borderline high cholesterol, but loves smoked sausage. I've bought chicken/feta sausage and grilled it which is good (Aldis). Hillshire makes a turkey sausage which is good. We don't eat pork. We had it tonight with kraut and sautéed onions. Easy dinner!

Question? I bought the 1/2 gal canning jars to store more cornmeal in. I have the 300cc O2 absorbers. How many per jar would I need to seal each one? TIA..

I think that is what I use, although I do more vacuum sealing in jars than using 02s, but they work well.

All I have are the 300cc. I guess if they don't seal after using two, I can add more. I'll just do one jar first, and see how it goes. I wish I had a jar sealer, but I don't. That's why I'm using O2's.

Unfortunately the tops for vacuum sealing are difficult to find and when you do they are way over priced. You can still get the machines and if mine breaks I'd buy another one pronto.

There are alternatives, if you are interested.

If you can find one, I've been very happy with my manual Pump N Seal jar sealer. Affordable and effective.

That's the kind I'd like to have, too. Hopefully, our farm supply store will have them in stock this Spring. I'm already looking for them when I go. We don't do business with Amazon, so I don't know any other place to look online.

Just as a reminder to everyone, Cary goes to see the Urologist tomorrow morning at 8:30 to find out what's to be done with the small cyst on his kidney. Neither of us know what to expect.

Depending on how the doctor visit goes, we plan to do some shopping while in the big city.

SouthernBreeze......research the kidney protocols online....there's strictly a BIG SYSTEM WAY and also alternative ways....did they MRI or CT? can't remember the details.....sometimes the cysts go away after kidneys are cleansed........look it up....Big Sys doesn't always go for the slower healing protocols.........perhaps they'll want to cut or insert stents etc. BE CAREFUL...

He had 2 CT Scans while in the hospital. One of those was with Contrast. Both showed that he had a very small cyst (supposedly cancerous) on one of his kidneys. The hospitalist told him that he would have to have the whole kidney removed. He made Cary an appt. for tomorrow with the Urologist, and we will find out from him what needs to be done. We've read that kidneys can be removed by laparoscopy. We've heard that he would have to undergo invasive surgery for the removal. We've also heard that only the cyst can be removed. So, that's why I say, we don't know what to expect.

When Cary left the hospital, his kidney function was back to normal, so no permanent damage was done.

Got another case of canned pork and a half a case of canned beef. Also got a 100 watt solar kit from Hazard Fraud to go out to BOL, a battery box for the battery I am going to hook to it. Found a new coat for Weebit on sale for $11 and a new sweater for Toot for $6. I am using money I got from my stocks peaking with all the Reddit fun. Of couse I am saving some back to buy some more when the market comes back down. I think it is a good investment, especially if it helps us get through the up coming hard times.

I bought mine directly from the company. Don’t need Amazon.

I canned 25 pints of black beans and freeze-dried 10 lbs of shredded mozzarella. The temperatures are dipping again, so I won't be able to do any more freeze drying for a few days.

Having a hard time sleeping on the dang steroids. I did manage to clean off the front porch, hang the porch swing, and cook up another couple pumpkins to freeze dry yesterday. Oh, and wrote a little more on an almost forgotten story on here. Now, since it's after 0100, I think I'm off to bed.

We put a new gasket on our wood stove door. It is now air tight again and we have more control of our burn time. This is something I have wanted to do for a long time. I am so glad it is done before the artic cold coming next week.

We also installed the new toilet. That is another improvement project done.

I planted my Cole crop starts in the cold frame. I sowed some greens just in the garden too. I hope to plant sugar snap peas today. I also picked up seed potatoes at the feed store.

January 11th I had bought lay pellets and scratch grain. February 3rd we bought that same feed. The lay pellets were the same price, but the scratch was up .75 cents a bag. The store owner said feed was not done going up. He said cattle prices were down, but cattle feed was going up. He said "you ain't seen nothing yet!" I also noticed a lot of empty shelves were the dog food goes in the store. But they may have had it in the wearhouse and just not have had time to bring it in to the store yet. They did seem short handed, but it was lunch time. Part of the crew may have been gone to lunch.

Once the ground dries a bit, I'm getting ready to sow loose leaf lettuce and mustard green seed in two of our remaining smaller raised beds. My garlic bed is already up and growing. All of my "walking onions" died out so, I'm going to have to buy more of those, soon, and replant.

As soon as the nurseries begin putting out their azaleas, I need to buy 3 more. All the ornamental shrubs that lined my front porch have died. I want to replace them with azaleas.

Sad, but I can't have flower beds because the goats would eat them. I had a beautiful crape myrtel and they ultimately killed it even though we had a wire fence around it. It was from my great grandmothers plantings when she lived back here a hundred years ago.

We have a lot of fencing to contain the goats but sometimes they slip out.

I fear that I'm going to have a problem with Frisco peeing on the new azaleas, once they're planted. I may have to put wire around them to get them started.

Azaleas are beautiful, but very toxic. If you have pets or livestock, you need to be aware of the potential dangers...

I didn't know that. Thanks! I already have several azaleas in my yard, and Frisco has never bothered them. I just don't want him peeing on the new plants.

Due to below normal temps we are moving my big pots into the garage. They have my fruit bushes in them.
I've started a new pickup list for Walmart but I'm making an instore visit tomorrow morning for a few things. Then Walgreens, back home and then staying in for at least a week!
