Note about preps and Covid.

Checked the pantry and found some surprises. A few months ago I stocked up on commercially canned soups. There was a really good sale. Now, only a few cans of less than popular varieties are left. Canned tuna also took a hit. Sigh.

With family staying home more the shelf stable comfort foods are being gobbled up fast. Need to make another shopping trip.

I don’t know if this will work. You can do a YouTube search of “reusing metal canning jar rings”
It’s a video of how to use Tattler rubber rings with regular used metal canning jar lids by Kili’s Kitchen. You could
Just order the replacement rings, instead of the rings and plastic lids.I thought it was pretty interesting. I would never have thought to do that!

Up until covid and lockdowns this wasn't an issue here either. It kinda snuck up on me while I was distracted with what's going on in the world. Happens.

This weekend I want to check the canned meat and other ready to eat foods like canned chili, SPAM, canned ham and corn beef hash. I suspect soup isn't the only problem.

I just received my shipment of Keystone 28oz canned beef (4 cans) and 2 DAK hams! No bent cans. If it's still available and at the same price, I'll be ordering more in a couple of days. I've got a pretty good stash of it, but need to add more. I'd love to have a stash of the ground beef as well.

Today I'm having a go at canning some sweet potatoes to see how that works out. Tomorrow is a much needed haircut so I won't have to worry about managing my hair while dealing with Sept cataract surgeries.

When I checked Keystone was out of stock. With what I already had I don't plan on adding more Keystone. I did order a couple of the DAK hams, and lots of paper plates. This last order is probably my swansong on buying more food because of money. I can do some emergency things but not more big stock ups. I'm not concerned because I have a lot of food, just on grocery store items upwards to to years if we don't pig out.

With the possibility of our power being out for an extended amount of time, I will need to buy more propane. One camper size propane tank lasts about 14 hours. We've used one of the 6 already, but we are only running the generator during the day for about 10 hours.

I have chicken, Spam, tuna, chili, soups, smoked ham, DAK hams, corned beef hash, BBQ pulled pork, roast beef, sausage gravy, all in cans. I wanted to add several cans of plain beef to the mix. I can store the cans under the bed out of sight. I have a box that fits nicely under the bed.

Am so glad that you are well prepped, Judy! You never know when you'll have to use what you have. You've done good.

I've made cornbread and biscuits in my Dutch oven over an open fire. They turned out good, too. Fried cornbread is an alternative that we also like. I make them like pancakes, and call them corn fritters. I've never taken a chance making loaves of bread in a Dutch oven, yet.

We have power and water outages all the time, even on a clear day, that last several hours. We are under a tornado watch with thunder in the distance right now. It's very windy here, too. We may have a power outage, before the night is over.

Glad to hear that you are safe, Judy!

I take bread dough and make a sort of 'fry bread' with it. I either use frozen roll dough, or form home made bread dough in to rolls, let rise, then dust with flour and roll flattish - maybe somewhere between 1/2" and 3/4", then cook them on a medium cast iron griddle. You don't want it too hot or the outside will burn before the inside gets cooked. If you roll them flatter, you can put topping on one, then add another rolled out piece of dough on top and crimp the edges a bit before putting them in the griddle - we used to make grilled peanut butter 'n jelly sandwiches in the pie-dies when we went camping this way; just press the bread dough into each side of the die, then add toppings on each side before closing it up and suspending them over the coals.

I was at the store yesterday and saw 6# bags of sliced, frozen, boneless skinless chicken breast for $6; I snagged a couple with the idea of canning them, but as the store owner was carrying my bags to the car, he mentioned something about them being Italian seasoned - guess I just totally missed the sign (I had younger grandson with me - he LOVES the grocery store lol!) Sooo - change of plans :) I vaccum sealed all the larger pieces in quart size bags - about 4 breasts per bag; then I took the small pieces that had broken off and the odd pieces that were left and thawed them in a baggie in the fridge until supper time. I cut them in to pieces and fried them all up, then added part of them to a package of Knorr's Alfredo noodle mix for Hubby and my supper. I must have left off making supper a little late to suit the grandsons because they kept coming by the counter to snitch 'chicken nuggets' off the plate they were draining on while I was finishing up the Alfredo noodles and making them the Teriyaki noodles they had requested - originally they had asked for hamburger patties to go with, but I just kind of forgot to make them since the rest of the chicken had disappeared :lol:

I may stop by the store on my way home from work in the morning or Monday morning to see if they have any left at that price; if so, I might try canning up one canner load to see how they taste.

Finished making another hunting knife today. Anything to keep busy. I do have 5 knife blanks left but my wife says I should start a new hobby.

My outdoor propane cooker arrived ! Now to make sure my propane is topped off. I have three cans of 15 lbs. so I know I can do two full ones and using the remaining third.

watched a movie with my 14 yo son last night, EMP 333Days. A def b grade movie with a powerful message. I’m trying to plant seeds in my boys head about what’s coming without being preachy about it.

Went to a small wal mart yesterday looking for a fireplace type bic lighter. No lighters at all! Gal said they had t gotten any in for a while. So amazon it is. Ordered a dozen. On the lookout for freeze dried instant potatoes now.

Braved Sam's and Walmart today. Don't really NEED anything, but still topping off a few things to stick in the last few crevices around here. Got: canned chicken, crackers, rice, ramen, granola bars, poptarts, sodas, water, some snacks, and some yarn, along with a couple of misc. canned goods. Went to Michael's yesterday and got more yarn, so I should have enough yarn (with what I had stored before) to open a yarn shop :) Lots of knit caps going out this year as Christmas gifts.

No power outages last night. We were under a tornado watch til 8PM, and had severe thunderstorm warnings off and on all night. One tornado warning issued for our county, but the tornado went north of us. No damage. We also had flash flood warnings issued, but we live on a ridge, so that wasn't a problem for us. Down in the valley, it's flooded, though. As dry as it's been for over two months, the flood waters will be soaked up soon enough. All the cotton fields should love it.

Took a closer look at the pantry. Something I made the mistake of not doing since lockdown with the family working from home.

Shelf safe comfort foods, ready to eat meals, grab and go foods are pretty much gone. There has been some serious midnight noshing going on. Evidently if there is one can left on the shelf there's no need to tell Mom cause we're not out. Grrrr!

Part of me is glad it's getting used, part of me wants to bang heads and part of me is mad at me for not keeping better track.

An effort is underway to: improve family communications.

I have the same problem. My main offender is DS who eats stuff out of boxes, like cereal, and puts the empty box on the shelf. Grrrr, oh well, things could be worse I guess

Hahaha, I feel your pain. Years ago I could hear my husband in the kitchen saying “Why, just why”? One of our daughters had put his box of townhouse crackers in the pantry with one single solitary cracker left in the box.

I’ve been working on an order for Sam’s, need to finish it and get the order in.
