Canning Was Just wondering.

I am old and canning is a chore now. As I canned sweet potatoes yesterday I was wondering what would happen if I got everything ready in the jars including the hot water ....then didn't can them until the next day if I was to tire to stay awake for the rest of the process.
That would mean the water would cool but what if I just cooked them longer?

Just curious!

I do this regularly. My life is too hectic for me to do start to finish in one day most of the time. So I'll prep the materials one day and then can them the next day.
In the case of sweet potatoes, I wouldn't even heat the fill water unless you are using a sugar syrup. And then I'd heat it just enough for the sugar to dissolve. (Or spices to extract) and then fill the jars. Then stick them in the fridge.
Next day put them in the canner with cold water, set the heat somewhere between 4 and 6, and let everything slowly heat up together. After the water starts boiling, proceed as normal.

Been wanting to can more stew but prep is sooooo time consuming. I cando it this way.
I do this with lots of things. Sit down with the recipe and work it out in stages. I'll even prep things and toss them in the freezer if I have them on hand but it's going to a week or so before I can get other ingredients or get back to the recipe. Then I can just pull them the night before and let them defrost.
And because the idea surprised some folks in my canning group, you don't have to stand at the kitchen counter for everything. Dining room tables are great workspaces that let you sit.
