Cover 1" to 2 " chunks of WHITE potatoes (peeled of course) with water and slow boil until almost done. (Will just barely mash) (this keeps them from being not so water logged. )
In the mean time separate some eggs ( amount depending on amount of pots) (( probably 2 or 3 per medium pan of pots.)) Throw the yolks away and beat the whites until peaked. Place in frig temporarily.

Drain pots : add a little salt: couple tablespoons margarine: ( ha watch me catch it for this one, hey ones 2 tbls is not much) : add milk to desired consistancy: Mash pots, then fold in the egg whites.

Variations. Add some garlic puree ( from wimpys former garlic puree recipe_)

And some raw onions and raw garlic to water when boiling and leave and mash up with the pots.

Add ½ tea vanilla.

About releasing our original recipes. I can't think of anyone I would rather share my secrets with than you ones. What the heck let others enjoy them as you do. It is a sign of non-selfishness. and careing. and love

Sounds delicious. My DH will love this one. He likes onions. I used to hate onions because of the smell and they gave me heartburn. Same thing with green peppers. But after 23 years (as of last Sunday) I can now tolerate onions and gn peppers. They don't bother me a bit. So I might just make these one day soon.

Have you used the search to locate other recipes posted by TB2kers? There are some mighty good ones on here. Lots of great cooks, yesirree! The holidays are coming up and I am positive that there will be a thread with lots of great recipes. I won't guarantee they will be low fat or calorie free. Just keep watching for it. :)

I boil whole potatoes with the skin on and then peel for mashed potatoes. Excellent flavor and they stay fluffy. Also be sure the butter is melted before adding. Gives a better texture, You have to try it to believe it. Never thought about adding egg whites, which I will do next time.

You and Cass have shared with us a very interesting bunch of threads on "potatoe stuff" and I thank you both! What is the vanilla called for (is it for KC or potatoes/with onions and gr. pepper?). Wimpy I think you and wife are very wise to watch your weight and I also believe you two eat well! It is possible to eat well and not to become overweight. Your slaw sandwich sounds like a winner! Thanks again.

Correction on utralight mashed potatoes

2 or3 whipped eggs white to fold in may be too many on second thought. Better lower that to one to two. Sorry. Just got to thinking about it . 3 is probably overkill. In fact one would be enough if you are only doing a small batch, like for instance 1 quart or less. I usually use two because when we do mashed pots we do lot so we have left overs for a while . Some of the leftover ideas are listed below.

If you like spicy.....

Jalapeno peppers cut in half, to taste of course, done same as onions (I put my peppers in cheese cloth). I then put taters and seeds through ricer as I do with onion. I had these for the first time in New Mexico and got the recipe from the chef, I guess he took kindly to us lowely Easterners.

My grandmother (old world) use to boil taters with skins on

Please don't do this. Beat the yolk and freeze. You can add them to scrambled eggs or use them in some other way later.

A lot of things people eat or drink would be better off in the trash can or down the drain. Egg Yolks are one of them. The fat off of an animal is another. However yes we may see the day that an egg yolk is needed. (when starvation sets in)
Hey now: cut out the fat , and cholesterol lady. Maybe I would like to see you around for a while ?????
