Food the cherry tomatoes thread

I've got them coming out of my eyeballs.

What's your favorite way to use cherry tomatoes?

We love to slice them in half, add feta cheese crumbles and a splash of Italian dressing. Sooo good!

I am probably going to try freezing some of my extras, though I'd love some ideas on how to use them after they're thawed.

For fresh eating I eat them like popcorn LOL! My next favorite is slice the tomatoes in half with some onion, a sliced English cucumber and pour over Italian salad dressing and let sit for awhile before serving, sprinkle on some McCormick salad seasoning and enjoy. Sometimes I also add a ripe sweet bell pepper.

I add them to other tomatoes when I’m making homemade/home canned juice, yum.

They dehydrate really well! Actually taste a bit like raisins, but if you dry them crisp dry, you can run them through a food processor or heavy duty blender (VitaMix type) and turn them into tomato powder. You can use that in all sorts of stuff... add some seasonings and make an instant tomato soup, add to gravy, other soups, even savory breads (a cheese bread with cooked-crisp pepperoni is amazing... toss in 1/4 to 1/2 cup tomato powder for a 2-3 loaf recipe and it's practically a meal by itself)

No reason you can't use them just like any other tomatoes for sauce, etc, if you've got too many...

I have considered canning them, I just don't want to have to peel them all :shr: I figured freezing them would be the best, quickest way to preserve them.

If you can, consider investing in a Victorio/Squeezo strainer. You'll never regret it! It makes things like tomato sauce, applesauce, etc SO fast and easy... it separates the skins and seeds.

I slice them up and put them on a parchment covered baking sheet and freeze them. When hard I put them into ziplock bags or freezer containers. I like them in scrambled eggs. I saute' up onions, peppers, and small diced summer squash, yellow or zuchinni, and some bacon bits, or whatever veggies you like. When those are almost done I put in some of the frozen tomatoes and cook until almost soft, then pour in the egg mixture and scramble. Melt some cheese on top. Yum! I also make a lot of garden veggie ragu. . Toss a handful of the cherries, fresh or frozen during the last few minutes of cooking. I also make some quiches, and put a few sliced cherry toms on top before baking. Really, you can add them to just about anything that you like. Homemade fresh pasta sauce, etc. Can you tell that I like tomatoes? :eye:

You can pickle cherry tomatoes. You can also make preserves with them.

This is what I've been doing lately. I use a bread and butter pickle recipe and just put the tomatoes in there instead of cukes. I can some in pints and others I just set in the fridge. Then after a few weeks of "marinating" spread them on a piece of thick bread or toast. mmmmmm
