Prep Genrl storing pancake mix

In an effort to have kid friendly food in case my son +4 end up here I bought a bunch of pancake mix. I know it does not keep all that well long or probably even medium term. I'm going to put it in mylar with 02 and seal. Initially I'm going to put it in one of the fridgs until I have space in one of our freezers. I'm thinking it will store for a good long while that way, unless we lose power for an extended period of time.

As long as it's in Mylar with 02 absorbers, I don't think you need to freeze it as well. Unless you don't have a climate controlled area to keep it. It will lose it's "oomph", first... if you store sone fresh baking powder (one of the few things I *needed* to buy this time to top off the preps), you can add it when using "older" pancake mix.

Thanks ST, you're the best. I was thinking freezer because if its just us I won't use it very fast, it would last us years. And my climate control flucuatates badly, even in the house. In my long term storage foods, that I though I'd lost but didn't, pancake mix was the only can that buldged, but then again it was a good 12 years old and had been stored very badly.

Pancake mix *definitely* has a shorter shelf life than most LTS foods. I had a similar experience with #10 cans of pancake mix (and biscuit mix) bulging when we cleaned out the root cellar. They were about 16 years old... roit celkar varies between 36 and 62 degrees year round. I opened the cans and fed the contents to the chickens. No one died!

I haven't opened the can yet, but giving it to the chickens is a good idea, thanks.

I even have to keep an eye on things in the house, more often than not when the weather is hot outside its 80 degrees in the house. No telling what my electric bill would be if I actually kept it cool.

Has No Life - Lives on TB
I pulled out a box of Bisquick from my freezer a few days ago that is over two years old. Still fresh! Since I've opened it, I'm now keeping it in my fridge.

While I was out Monday doing my normal shopping run, I picked up another 20 lbs. of flour, and 10 lbs. of cornmeal. Working on getting all that canned up.
