Baking Rice Flour

I was reading about rice flour. Since I have a few pounds of rice, I thought using it as flour might be good.
Does anyone use rice flour? Any good recipes?

A PA Dutch country butcher told me not to use it in scrapple instead of cornmeal as a thickener. According to him it turns to concrete.
