Arrowhead with Egg Vinaigrette

1 lb. Arrowhead tubers, scrubbed
2 hard cooked eggs, mashed
1 egg yolks, raw (rehydrated from powder is another option)
1/2 c. Olive oil (olive is preferred but you can use whatever you have on hand so long as it doesn’t have a strong taste)
1 t. Minced parsley (fresh or dried)
1 T. Minced basil (fresh or dried)
1 t. Minced chives (fresh or dried)
2 T. Lime juice
1/2 t. Salt
1/4 t. Pepper

Boil tubers in salted water until tender. Plunge in ice water and peel off outer layer. Mash hard-cooked egg with raw yolk. I know, it sounds gross and doesn’t look much better but it really is good. Add this a teaspoonful at a time, while beating. Next, add remaining ingredients and mix thoroughly. Pour over arrowhead and marinate for 3 to 4 hours. Serve on a bed of wild greens. Yield: 4 servings.

Arrowhead with Garlic Dressing

1/2 lb. Arrowhead, scrubbed and steamed until tender
1/2 c. Thinly sliced red onion
3 cloves garlic, crushed
1 t. Salt
1/2 t. pepper
1 c. Olive oil
1/2 c. White wine vinegar
2 t. Honey
wild greens

Combine garlic, salt, pepper, oil, vinegar, and honey. Mix well. Pour over. Arrowhead and onions in a bowl. Refrigerate over night. Serve on a bed of wild greens. Serves 2.

Makes a light lunch on a hot day while you are gardening.

The banana yucca are currently in bloom at my location. The flowers are large and the pedals are thick and juicy. While hiking I often pick a pedal here and there to nibble on while hiking.

We do gather them for salads. Just make your regular salad but replace the lettuce with the yucca flowers.
Note: taste test each plant before picking the flowers. Some are bitter so skip those and just try the next plant you see. Most taste just like Iceberg lettuce. I have never discovered why some plants have a different taste.

My yuccas are in bloom right now, too. Are all types of the yucca flowers edible? I don't know what type mine are. I do know the roots of the yucca are also edible. Use them just like potatoes.

As far as I know all yucca blooms are edible, up to and including the ones that are on the Spanish Bayonet plant which is also a type of yucca.

Thanks. That's good to know. I deliberately set out yuccas all around my fence perimeter not only for defensive purposes, but for edible forage as well.

Down in Mexico they use the agave plant to create places that will "fence in" cattle, etc. I guess after a couple of pokes they avoid it about like barbed wired. Plus they get a crop from it.
