Sometimes the simplest recipes can be the best ones, and that's the case here. These are great for those of us who work and must cook for ourselves when we get home. These recipes are quick, use few simple ingredients and are very easy to prepare, and you just won't believe how good they are.

Sage Butter Chicken

Melt a fair amount of butter in a skillet on low heat. Add few fresh sage leaves and gently fry them until a little crispy. Remove sage and set aside. Turn up heat to medium and put chicken in pan. Brown chicken well on both sides. Put chicken on plate, put sage leaves on top and pour remaining sage butter from pan over the top.

Portabella Chicken

Cut chicken into bite-sized pieces and sprinkle well with garlic salt and black pepper. Dice portabella mushrooms into 1/2" cubes (about one 6" diameter portabella for every two breasts or thighs). Melt a lot of butter in a skillet and add mushrooms, cooking them on low-med heat until they start to brown. Push mushrooms out to the edge of the pan, clearing a spot in the center. Put the chicken chunks in the center and pour a good dose of extra virgin olive oil on them. Cook chicken until it turns white, then mix chicken & mushrooms and cook them together for a few more minutes, then serve.

Lemon Thyme Chicken

Marinate a chicken breast or thigh for several hours or overnight in lemon juice, dried or fresh thyme and black pepper. You don't need salt or any other spices. Brown it throughly in a little olive oil, and serve. This tasty recipe is extremely low-fat and low-sodium.
