Get the largest piece of flank steak you can find. Score it's surface with a sharp knife in a diamond pattern, being very careful not to cut all the way through. Place steak in a baking pan and cover with lots of soy sauce, crushed fresh garlic and black pepper. Cover pan and marinade for 4-8 hours in refrigerator. Mix regular poultry stuffing mix with diced onions & celery and moisten with water or broth. Cover scored surface of steak with a layer of stuffing. Roll up steak and secure with toothpicks or butcher's twine. Heat a Dutch oven on the range, put some oil in the bottom and brown the stuffed flank steak on all sides. Reduce heat, add the remaining marinade to the Dutch oven, cover and cook on lowest possible heat setting for 3-4 hours. When done, remove carefully and slice into 2" thick pieces. This is delicious, and the spiral rolled pattern looks pretty fancy.
