Honey-Lime Chicken Strips or Wings
4 chicken breasts cut into strips or 36 whole wings, split
1/2 c. honey
1/4 c. fresh lime juice
2 T. grated lime zest
4 cloves garlic, minced
1/2 t. ground black pepper
1 c. all-purpose flour
vegetable oil for frying
In a large bowl, mix together the honey, lime juice, lime zest, garlic and pepper. Place the flour in a plastic bag and shake the chicken strips or wings in the flour to coat. In a large skillet, fry the chicken in hot, 1 inch deep oil until cooked through and a nice golden brown color. Place the cooked chicken on a paper towel to drain off excess oil or pat them with the towel to remove the excess oil. Then place the chicken into the honey/lime mixture and toss to coat well. Serve immediately on a bed of hot rice or alone.
