This is very easy and very delicious.

Original Corn Casserole

2 cups canned yellow or white hominy, drained and patted dry
2 cups fresh corn kernels, preferably, or 2 cups frozen and thawed corn kernels
1 garlic clove, minced
8 ounces sharp cheddar cheese, shredded
2 cups milk
4 eggs, beaten
1 teaspoon salt
1/4 teaspoon cayenne pepper
Preheat the oven to 350 degrees F. Lightly oil or butter a baking dish or casserole.

In the baking dish, stir together the hominy and corn leveling off the top of the mixture with a rubber spatula. Top with the garlic and cheddar.

Whisk together the milk, eggs, salt, and cayenne in medium bowl, and pour this mixture over the top. Bake for 50 to 60 minutes, or until the casserole is set and the top is bubbling. Remove from the oven, let rest for 5 to 10 minutes, and serve hot.


Yield: 6 to 8 servings

Thanks,been trying to dream up a side dish to take over to the family git together Thurs.

Here is another corn recipe. My very favorite. It was adapted from a recipe by the Shakers at Pleasant Hill, ky. These freeze wonderfully if you want to make the ahead of time.

Corn Pudding

2 Cups Frozen Corn
2 Tbsp Flour
1 Tsp salt - optional
1 Tbsp Butter
3 Whole Eggs
1/4 C Sugar
1 3/4 C. Milk

Chop the corn lightly in a food processor
Blend Butter, Sugar, Flour and salt
Stir in corn and milk
Pour into casserole dish and bake
325 for 45 minutes — stir ½ way through cooking


To Freeze:
Follow directions above
Pour into a quart Ziplock and freeze

To eat:
Thaw - pour into casserole and bake

Went over great Homestyle.
Everyone seemed to enjoy it.
( or they coulda been lying and just ate every bit of it so as not to hurt my feelins) ;)

I know this is going to make you say..ewwwww, but give it a try, it is wonderful!!

Corn soufflé
1 can cream corn
1 can whole kernel corn - drained
1 bx Jiffy corn muffin mix
1 c sour cream
3 eggs - beaten
1 stick oleo, cut into "pat" size slices & dropped into mix
¼ c mayo
1 c grated cheese
Mix together
Place in greased casserole - bake 350° for 1 hour or until done, sprinkle cheese on top and return to oven until cheese melts.

I use 2 c cheese and only 2 eggs, but you know how it is...always modifying recipes. :rolleyes:

Another Corn Casserole recipe

Here's one more for you all to try.


Corn Casserole

1 stick margarine
1 small onion, chopped
1 small can green chilies, chopped (mild)
garlic salt to taste
salt and pepper to taste
1 8-ounce package cream cheese (can use light-not sure about fat free)
3 cans vacuum-packed corn (or very well-drained regular pack)

Saute onion and chilies in margarine. Season with salt, pepper and garlic salt. Add cream cheese and melt, then add corn. Simmer for a while to develop flavors.

Can also be made in a crock pot but I haven't done it that way yet.
