Ramen Noodle recipes

I recently perfected a ramen noodle soup concoction and I wanted to share with folks here. This is for an oriental style, more specifically Thai which can be altered to suit your personal taste. This is what I use:

4 frozen uncooked potstickers in about 3 c. water - boil for 8 min. then add
1 1/2 c. frozen oriental style vegetables - cook for an additional 2 minutes then add
1 pkg oriental ramen noodles and soup mix and additional bouillon cubes - cook for additional two minutes.
add a few dashes of ginger powder
add 1/2 can of light coconut milk - then turn off heat and add
a dash of Tamari (better than soy sauce)
1/2 tsp of sesame oil and
some chili oil to taste - stir and serve.

I some times add frozen shrimp after I turn off the heat, but these never really add any more flavor to the soup, just protein. You can use a can of mixed vegetable instead. Some times I add shredded Mexican cheese and stir until creamy. It is so, so yummy, and easy to assemble.

Ooh! Anyone have the recipe for that Ramen noodle salad? It's a regular lettuce salad but with raw, dry Ramen noodles and it has an Oriental-tasting dressing. We had it as a party a while back and it was yummy!

And I'd love to have a recipe for pot stickers and the dipping juice!! Yum!!! MissTina, they're like little dumplings and gooooood!

Here ya go Booger. Thanx for all your goodies, too. 1st recipe is soggy style, but
more Ramen noodles can be added just before serving.

Oriental Cabbage Salad

2 C. sunflower seeds
1 C. slivered almonds
1 bunch green onions, cut up
2 1# bag cabbage slaw mix
2 pkgs. beef flavor Ramen noodles

* Dressing ~ 1/2 c. sugar
3/4 c. veg. oil
1/3 c. white vinegar
the 2 pkgs. beef flavor seasoning from noodle pks.

Crush Ramen noodles in package before opening & save flavor pkts.
Combine all of the above in bowl and slowly stir in dressing, mix well.
Cover and refrigerate overnight.
Next morning stir salad very well. Additional crushed Ramen noodles may be
added just before serving.

~~~~~~~~~Crunchy Chinese Salad~~~~~~~~~~

1 large head Nappa Cabbage, shredded (or 2 pkgs. cole slaw salad mix)
1 bunch green onions, cut up
1/2 c. butter
2 pkgs. Ramen noodles (discard soup flavor pkts.)
1/2 c. sesame seeds
1 sm. pkg. sliced almonds

Dressing~
3/4 c. veg. oil
1 T. soy sauce
1/2 c. white vinegar
3/4 c. sugar

First mix cabbage and onions in large bowl, set aside
Melt butter in fry pan over medium heat. Break noodles in small pieces and
lightly brown with sesame seeds and almonds. (Will brown quickly!)
Cool and drain in paper towels.
To make dressing, combine all ingredients and mocrowave to disslove sugar.
Let cool before serving.
Toss together all salad ingredients and add cool dressing, just before serving
(sunflower seeds can be substituted for expensive sesame seeds)

Costco out here sells them in the frozen section, Panda brand, and they come with dipping sauces. You can also make your own with soy sauce/tamari, vinegar, sesame oil/chili oil, and even hoisin sauce. The local Safeway also carries them.

Another recipe I've been wanting to create is one with Ramen and Thai peanut sauce for Pad Thai, topped with green onion and chopped celantro leaves. The local grocery sells pad Thai sauce in a jar. I suppose you can add chopped chicken in as well. I'll have to try to make it soon.

Oh, thanks for the Ramen salad recipes, Occupant! That second one sounds like the one. :)

Gillman, do you need a recipe for the peanut sauce or did I misread that? It's really simple but, of course, don't remember it all right now. :lol: Peanut butter, soy sauce, chili sauce or oil, and garlic is about all there is to a basic peanut sauce. We serve it over plain spaghetti noodles but it's been a long time since we've made it.

Gotta go dig up recipes for the pot stickers and sauce now! This new SIG is really bad on the grocery budget, have ya noticed?? :lol:

For a lunch for the kids with a bit more nutrition than just the noodles, add 1 tblsp/pkg of the tiny diced dehydrated carrots that Walton Feed sells, 1 tblsp dehydrated onions, 2 tblsp dried peas. Make package as directed along with the veggies (you can rehydrate separately first if you like) then add flavoring package. If you are making several packages at one time, the addition of a 5 oz. can of chicken will add some protein. Otherwise, drizzle a beaten egg into the soup like eggdrop soup and they will have a nice complete lunch. Just add an apple or something like that.
