Happy Sunday!
Yes, Apple pie dump cake sounds wonderful...but the apples Husband bought Saturday were $7.00 for two pounds!! So no apple anything for a while, I guess. He doesn't look at prices (seems untrainable on this), so he's not sure what the other apple prices were. I only found out when I looked at the receipt later. And here we are on a very tight budget - ugh.I wanted to cry, but he felt bad enough.
It's gray and chilly here today, and yet again, I am cold. We had the fireplace going for a bit.
But I am proud of us today, too. When we went shopping yesterday (Walmart being the only store around unless we go 40 minutes), there were no whole chickens out, but I asked and the kind gentleman found two 2-packs at $1.32 per pound.
This morning, Husband butchered and I packaged:
4 packages of two bone-in breasts (each package enough for us, with lots of leftovers)
4 packages two boneless thighs (more our speed)
1 package of wings
2 packages of backs - with enough meat on them that it will be enough for a full meal for each of us
1 package of cooked chicken livers (for sandwiches). I saved the liquid as well for chicken gravy.
Plus the crockpot is full of 8 legs, 4 necks, plus 8 bones from the chicken thighs that still had some meat on them, along with shallots, garlic, salt, a couple of bay leaves and a little apple cider vinegar. I plan on taking the bones, etc., out tomorrow after it has been in the refrigerator all night (so I can skim the fat off) and then putting chicken bits plus broth in jars. I can open a jar, put in the pan, and make something from that by adding mushrooms and other vegetables. The crockpot is filled to the brim, so should be several meals.
Me: So, do you want some of this chicken for dinner tonight?
Husband: No! I am chickened out! Please make enchiladas from the leftover roast. (That's the third meal from that roast, and we still have some leftover.
