Couldn't find a thread with pumpkin recipes so I figured I'd start one. I'm a big fan of all things pumpkin, though I draw the line at some things (pumpkin spice spam, for instance). Pumpkin is one of my all time favorite comfort foods, and if there ever was a time for comfort food it's now ;)

Tried some pumpkin pie dip recently and OMG it's like crack in a bowl. You can dip apple slices, graham crackers, nilla wafers, anything really. DH made a toasted bagel and spread some on top, he said it was awesome. You could probably make some amazing parfaits with this, or maybe use it for pastry filling. I almost tied my tongue in a knot licking the beaters when I made it.

Best part of this recipe is it's 3 simple ingredients, no measuring or baking required. This could even be made more diet friendly by substituting sugar free items.



Pumpkin Pie Dip
1 15oz can pumpkin puree
1 8oz container of cool whip, thawed
1 small 3.4oz package instant vanilla pudding mix
Optional: pumpkin pie spice (yes please)

Mix everything in a bowl with an electric mixer or whisk, chill in the fridge. Easy peasy!

Odd that you posted this today. Checked my garden yesterday - pumpkins are ripe, watermelon are not. This has been such an odd year for gardening.

Thanks for adding some recipes! Never made pumpkin soup but I think I'm going to give it a try once the cold weather comes.

Moldy, our watermelons are going very slowly also.

I’m just waiting for the weather to cool off so I can bake some pumpkin bread.
Me too! Still trying to use up my excess zuchinni so it will be zucchini bread for a bit longer here, but I am having mad cravings for pumpkin cookies. I'll try to post the recipe soon. I picked a bad time to start a diet :shr:

My mom passed away when we kids were pretty young, and over time my dad gained some impressive kitchen skills. I grew up eating these every fall and made him give me his recipe when I moved out. Now I make them for my family. I think the secret to these being so good is the hint of ginger.

Pumpkin chocolate chip cookies

1/2 cup granulated sugar
1/2 cup brown sugar
1 cup softened butter
1 tsp. Vanilla
1 egg
1/2 tsp ginger
1 cup mashed pumpkin
2 cups all purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 tsp cinnamon
1 cup chocolate chips

Preheat oven to°350.

Beat sugars and butter. Add vanilla, egg, and pumpkin, blend well. Stir in flour, baking soda, salt, cinnamon, and ginger, mix well. Stir in chocolate chips.

Drop by rounded spoonfuls on to ungreased cookie sheets. Optional - flatten with metal spoon. Bake for about 14-17 minutes or until edges brown lightly. Note- very moist and cakey, don't undercook.

I just told my oldest DD about your cookie recipe, she likes to bake with her nephew (my grandson) here on Sundays. Since all three of us love pumpkin and chocolate this sounds like something we would love.

If you’ve never had pumpkin donuts from Krispy Kreme, they are so good. Fortunately we don’t have one close by but when we go to the Smokies in the fall, we always get some.
