Canning Overprocessed Meat in Pressure Cooker

Well, I have certainly done it this time. I cooked up 10 Pints of hamburger this morning. Put them in the pressure cooker for 75 minutes and when they were done. I turned the gas off. EXCEPT...I turned the knob in the wrong direction which put my gas stove on LOW cook. So three hours later as I empty the Pressure cooker I saw that the jars were still bubbling. All the lids are down but what does that do for the meat inside? I have never had this happen to me before. Anyone have any experience with this? I don't know whether to cry or throw it all out.

First, don't cry! It's certainly safe to eat. It may be overcooked (likely), but you won't know until you try it. I'm guessing you're going to want to use it in "heat and eat" meals as much as possible... not addind it to casseroles which need an hour to cook the other ingredients, for example.

As an absolute last resort, if you've got any pets, it will make great, high protein pet food.

Thanks Summerthyme. I was hoping you would answer. Thought to use it for sloppy joes, made rites etc. In my panic it never dawned on me I have a 92# Great Pry. But she hates beef. Just my luck. LOL

I would say donate to someone BUT if their dog got sick you know what they’d blame. Sigh.

Perhaps you can make up something like chili and throw it in at the last minute just to warm the meat. Perhaps it wouldn’t be too noticeable.

Maybe just use a little at a time in things? At least you know the stuff is safe. lol. This is why I hesitate on canning meat. Pretty expensive if it messes up and I’d most assuredly make sure that happened. If I mess something up - I do a FANTASTIC job at it.

With ground beef I'm not too sure if you would notice much difference in most meals. I would certainly use it, or at the very least try it.

All great answers. EXCEPT the chili. Wouldn't you know my luck happens to be that we always make a huge pot and CAN about 18 qts. at a time. That would make this on a par with twice baked potatoes.:dvl1:

If I turned it into dog food, I'd add it to a filler like rice or bread crumbs. It would be better for the dog's tummy and extend the meat.

After all that cooking, it won't hurt to cook it for a little while if you add it to something. Canned food always needs to be brought to a boil and cooked for at least ten minutes if it's in stews, etc. or baked in a casserole long enough to get it to a high enough temp to kill bacteria and held for ten or fifteen minutes.

It may not be as bad as you think...you did turn it on low so it wasn't at full pressure that whole time. You would have probably had a huge mess of broken jars and no water left if you had pressured at ten or so pounds the whole time.

This is exactly what I do. My Memaw used to say that gravy covers a multitude of sins. LOL So does spaghetti sauce, chili, marinara sauce, BBQ sauce, and on and on and on. ROFL!!!

Well, I just labeled it MUSH and put a date on it and put it in the cupboard. 'll let you know what it tastes like.

When I woke up this morning my first thought was "Now I know why my wonderful, perfect dog won't touch one piece of beef and gets sick if she did. In one of her past lives (A Dogs Journey-Cameron) she lived with a Granana:p

No. I would just make the chili with no meat. Not can it the meat with it. Just throw my tomatoes and add whatever is your preference in chili. And THEN warm the meat in that. Not can the chili w that meat.

OR you could can some without the meat. Mark it and wham. Warm everything then throw your meat in.

No. You don’t want to can it again. That meat was already doubled canned. Le sigh. It’s done baby. I MIGHT make chili w store bought stuff in it and try warming the meat in it and see if it’s worth it before you can up chili w no meat.

We don’t can anymore because of stupid glass top stove, so our stuff is out of store cans. But, if I could grow a tomato up here that I actually got to pick (we have something that steals everything except squash). I’d can those some way, some how. I love home canned tomatoes when I’m sick. And well, if I’m walking around or awake. That is a high commodity in my house. Get tired of the nasty store crap right fast. Besides the fact that they are easy enough to can even I can do it.

I have even gotten brave enough I’d do some meat to experiment with, but not anything that I loved. Not yet. I need to find someone to go in with and teach me how to do that and I could cut/pack at least. But I’d still have to find a way to do it later. Obviously there are ways, but on meats? It would pay me to help someone the first time so I could learn. Yes, I can follow directions, but have too many questions at this point.

Lol. MUSH. I LIKE IT. There’s a reason you got mush. I’m sure of it.

One thing I didn’t think about was using it as flavoring. ??? Of course depends on how it “acts”.

That’s funny about A Dog’s Journey. You may be correct! Good an answer as any other we have.

I do pulled pork in half pints, because it's a perfect size for a couple of sandwiches for a working lunch on a busy day.

Canned stew or other meat does have a slightly "different" taste, but it's not offensive... I can see super picky eaters complaining, but not if they were hungry!

Yeah, but I would have to come up with equipment. (She whined). lol. Guess I need to start keeping my eyes peeled. Of course there is an older woman next to us that I am positive has everything you’d ever need because she’s just that way. But she has more energy than I do so I’m kind of afraid to go ask. Lol.

She’s had four husbands and outlasted all of them (of course there are rumors) but she scares me!

In all seriousness she’s a wonderful person. We just don’t know what happened to the husbands. But she will do anything for you if you ask and knows you’re not scamming her. I love her to death. Just don’t think I can cram down enough supplements to keep up with her.

I can imagine lots of uses for Mush - tacos, taquitos, enchiladas, beef noodle soup, seasoned and poured over rice or noodles, add BBQ sauce and eat on a bun, add mayo and eat as a cracker dip, mixed with shredded cheese and eaten on a warm piece of toast, pepper stuffing.....
