Happy Divine Mercy Sunday!

We are enjoying another lovely spring day, blue skies, a light breeze, and 67 degrees.

We are deep into the long process of setting up in the new house, and we are deciding that so many things we have been using for years are able to be eliminated, which is wonderful! I am still working two jobs for the next few months (tho less than before :spns:) so I am not able to do very much during the week. But on the weekend, I am on it. Also, for the past months of working and packing, I have developed horrible pains in my right arm and back. Turns out it's carpal tunnel which is nasty, but easy to fix. One thing after another! *sigh...*

Dinner will be Chinese, delivered. Can't wait!

How about you? Share a square or just "What's for dinner?"

Tomorrow is the big eclipse, which passes right over us. It's beautiful today, but tomorrow might be messed up. Oh well, people will be out on the 5th floor indoor/outdoor loungey area, and out in the back yard with tables and chairs. Got our glasses. Then at 5 PM, they're having a chicken dinner. Looking at the menu -- House Salad, garlic bread, chicken Parmesan and baked ziti.

Today? Meh. I dunno yet. Nothing big.

Has No Life - Lives on TB
Rain starting for us, tonight, all the way through Thursday, so we won't be able to see the eclipse. We're only in the partial eclipse zone.

Tonight, I'm making cheeseburgers with all the fixins and chips. Not too healthy, but we don't get them often.

Sunny and 58 degrees. Heavenly to me.

I had Chinese too, but no delivery out here. I made a big batch of shrimp dumplings (Extra to freeze), a batch of roast pork egg foo yung and some sesame style green beans. It came out delish if I say so myself.

I fried some boneless pork chops,rolled them in corn meal ( very little oil) baked potato, green beans and a small side salad. I'm stuffed! It may rain tomorrow here, our a/c is on its way out, so we decided to replace both inside and out,ugh . We got a good deal, we just replaced my washer & dryer. It's time to stop lol : )

Don't screw with an engineer
Experimented with turkey pot pie for lunch. I wanted a flaky crust, so bought two rolls of rectangular puff pastry dough. I lined an aluminum pan with a crust and browned slightly, piercing with a fork. Didn't brown enough!!!
Added cooked turkey, peas and carrots, mushrooms and Limas. Added thickened broth from turkey, jar of turkey gravy and jar of mushroom gravy. Covered top with another rectangle of puff pastry dough. Pot pie was good, dough on top was great, but pastry dough on bottom was doughey... Flipped pot pie over to recook for dinner and hope to salvage.
Next time I will fully brown and crisp bottom dough before adding ingredients...

Life is better in flip flops
It's been a nice quiet weekend. Had the grandsons last weekend. What a difference a week makes lol
For dinner I made a squash casserole, boneless porkchops marinated in a parmesan garlic blend and an apple cinnamon dump cake.
We are not in the path of totality but I may drive to DD house 30 minutes away. She is in the path of totality. I haven't decided yet.

‘Chinese’ is not enough info…… what flavors/dinners?

ETA: pot roast, potatoes and carrots for us…..

It has been steadily clouding up all day, and finally spitting some rain. Not complaining in the least - we need it.

Dinner was a porketta roast, mashed potatoes and steamed asparagus. Went on a baking frenzy this morning and made lemon poppy seed quickbread and oatmeal chocolate chip bars, so there will be munchies in the house for the week.

Beautiful day here today. Back to work for me tomorrow after spring break.
Laundry is going. Others chores are done (Or as done as they are going to be ;)).

Dinner was chicken, roasted brussel sprouts, carrots, and some leftover green beans. Delicious.

North to the Future
I’m in a small rural town, a couple hours south of Seattle, caring for my brother recuperating from surgery for pancreatic cancer, etc. Its been nice to enjoy an early spring…and when I go home I’ll be in time for spring all over again!

Out doing errands and laundry while he rests and took myself to dinner at The Rusty Tractor in Elma, Wa. “Old Fashioned Family Dining”, the sign said. Got the meatloaf dinner and let me tell you, I’ve never, ever tasted better. I begged for the recipe but I think I’ll have to come back with some muscle to get it out of them. ;)

My brother isn’t up to eating much but I think he’ll like this, yum. And he is improving, thank you Lord - but slowly, Can’t wait for the drains to come out in a couple weeks. And I have got to get home soon. He will stay in the room I rented for at least a couple more weeks before he goes back to camping. Been a rough go, but we keep each other laughing a lot!

On TB every waking moment
Got my subscribed farmbox on Friday, so made a stew with fresh carrots, onions and green beans. I had the meat & potatoes. Made some cornbread muffins to go with and Pineapple upside down cake.

I spent much of the day outside. After my big C surgery last fall, I am finally getting out of the rut of babying myself. Also, I think rains will slow down. I put fertilizer stakes under all the citrus & fruit trees & planted some strawberries.

A little each day until I get caught up with the backyard work. My seedlings are in pots in the cold frames and are all of a good size for planting. I need to clean out the raised beds, add some bagged manure I bought last year & get those suckers in the ground..
