Need help with meal plan

I am cooking a meal Saturday evening for 12 people. :eek: I will have to prepare this meal at home and then take it to my in-laws house. MIL is recuperating from total hip replacement and can't cook. Meatloaf has been requested. How much hamburger do you think I would need to prepare a meatloaf for 12 people, with 5 of these people being huge eaters? This will not have sausage in it, just hamburger.

Also, DD thought I should bake a cheesy potato casserole. What other foods would compliment this meal? They really don't like fancy foods, just some hillbilly cooking.

5 lb of hambuger. Green beans or baked beans. Pickled or deviled eggs. Instant potatoes unless they are willing to peel spuds with you. Instant puuding 2 boxes

Yeah, 5 pounds of burger ought to do it. Ditto the green beans and/or baked beans.

No, no instant mashed taters! Ew! :lol: If you want mashed taters (and ya gotta have mashed taters and gravy with meatloaf!), just cut, boil, and mush with the skins on. Heck, even the restaurants do that around here and people love them.

You could also do a salad of some sort. Tossed, pasta, vegggie, or whatever you have time for. How about biscuits? They're quick and easy.

Dessert? Hmm... We're not dessert people so I don't have ideas for that. Oh, check out the PB cup recipe I posted--really quick and easy if they're into PB cups. Maybe a fruit crisp of some sort? Dump some canned fruit filling in a casserole and top with oatmeal, butter, brown sugar kind of topping, a quick bake and you're done with it.

Man, I hate coming to this new SIG. I always get too hungry! :bwl:

Easy Meatloaf with "Potato frosting"

If you've got a couple 8x13 pans and can bake this, it's easy and VERY VERY yummy. It's from the Saving Dinner book, and it's for 2 people. Just increase everything by 6 times to make it for twelve.


Market Meatloaf with Potato Frosting
Serves 2

1/3 pound ground turkey OR extra lean ground beef
1/4 cup onion, finely chopped
1 1/2 tablespoons oatmeal
1 small egg, slightly beaten
1 tablespoon milk
1/3 tablespoon ketchup
1/4 teaspoon cumin
1/3 teaspoon garlic powder
salt and pepper to taste

TOPPING:
1 cup mashed potatoes -- prepared
1/3 of 11-ounce can whole kernel corn
with red and green peppers -- drained
4 teaspoons green onion -- thinly sliced
1/3 cup low fat cheddar cheese -- shredded

Heat oven to 375 degrees. In a bowl, combine meat loaf
ingredients (ground meat to salt and pepper), mixing lightly but
thoroughly; gently press into bottom of 8-inch square baking pan.
Bake 20 to 25 minutes or until no longer pink and juices run
clear. Carefully pour off drippings. Turn on oven broiler.

Meanwhile in medium bowl, combine all topping ingredients except
cheese. Spread over meat loaf to edges of pan; sprinkle with
cheese. Broil 3 to 4 inches from heat for 3 to 5 minutes, or
until top is lightly browned; cut into 2 rectangular servings.

Per Serving: 378 Calories; 18g Fat (42.9% calories from fat);
24g Protein; 30g Carbohydrate; 3g Dietary Fiber; 90mg
Cholesterol; 636mg Sodium. Exchanges: 1 1/2 Grain (Starch); 3
Lean Meat; 1/2 Vegetable; 0 Non-Fat Milk; 2 Fat; 0 Other
Carbohydrates.

SERVING SUGGESTIONS: Steamed broccoli and baked sweet potatoes.
A green salad would be nice, too.

VEGETARIANS: Use 1/3 to 1 bag of thawed TVP Crumbles as your
"meat loaf" base. Double the ketchup and spread over the top;
sprinkle with spices over the top. Bake in a 375 degree oven
until heated through, about 15 minutes. Make mashed potato
topping and follow remaining recipe directions.

When you see a recipe that you like , go to bottom of page and there is a multiplier for how many servings you need, put in the amt. and the recipe will reload with correct proportions . :)

Occupant beat me to it. The http://www.allrecipes.com site is just fabulous and they have a recipe on that site for a chocolate pudding mouse made with cream cheese that is soooooooo simple and tastes wonderful. Put in a search for it on that site and I'm sure you'll find it.
 
Meatloaf eh? This was a request but you don't necessarily have to make it? A big pot of spaghetti sauce sounds mighty easy to me, LOL. It would be a lot cheaper too with less meat in it.

Anyway, if you're going with meatloaf, maybe baked potatoes would be easier for a side. Throw them in the microwave (2 minutes per potato usually). Throw in some corn or green beans... maybe a tossed salad, and wala!

Thanks to all of you who made the wonderful suggestions. Now, to sort through them and make my final decision. :shr: They all sound so good too. That gives me a lot to think about. I'll talk to the hubby and get his opinion too. Thanks!

Well, it didn't go! :shk: After all the worries I went through trying to plan a meal, it was cancelled for now. :shr: It kind of upset me at the time, but I guess everything happens for a reason.
 
TF - Well I understand. I'd highly recommend if there's ever another occasion that presents itself like that, I'd quickly speak up if any special menu is brought up - with a comment like "I'll be happy to prepare the meal, but I'll decide on the menu later, since I have to prepare and transport it, but thanks for the suggestion... that was very thoughtful of you." (NOT).

I've been in situations like that before and have found life's just much more pleasant if I keep it under control for my OWN sanity and budget. (The older I get, the bolder I've become, since it IS a great deal of work involved.)
