Food My prep flour gone? Nope!

God is good. Two years ago I bought 3- 50lb bags of flour from Honeyville Farms...put them out in the canning shed in huge sealed tubs, meaning to can them and/or freeze it into smaller bags. Around here, there's more on our list to do than there is people, so just forgot about them.

Been in the canning shed a bazillion times since I got them and just overlooked what was the elephant in the room...for 2 years. With all this "stuff" getting out of control and trying to get the last of my ducks in a row, I thought about flour. FLOUR? I HAVE flour! Dag nab it...it's been in the canning shed where it gets hot and humid in the summer, I live in the southern part of the Ozarks, and dang freezing in the winter for 2 years...well, hell's bell's...may as well go face the music and just open them up. Dear Lord, please, please let it be useful...I'm sorry I let it go...please.

Well, I made a face cuz I just knew it was going to be bad...so I cut the bags open. I was amazed. Smelled wonderful, like good flour should. No bugs, not wet and clumpy, like store bought flour...it was still perfect.

I have spent the day, repacking them into freezer bags then in to larger freezer bags, freezing them and I will just put them back out in the canning shed in the tub I had them in and thank the good Lord for preserving it for me and since we have no where else to store them, keep praying He keeps it all preserved until needed.
Did I mention the Lord is good? Just wow!

I bought several pounds of flour and cornmeal at one time, before I had a second freezer. I repackaged all of it into gallon sized freezer storage bags. One gallon equals a 5 lb sack. The only room I had to store them was on shelves in a cabinet in my laundry room. It gets hot in there during the summer, and stays cool in the winter. After about a year, maybe longer, I bought my second freezer. I got all the flour and meal down off the shelves, and checked them out really well. No bugs, and no off smell. I simply placed them in my new freezer. Once used, it was just like fresh.

I don't think there is one guideline that fits everyone.
