Aww, Sat, I thought you'd managed to save that bass!

A while back one of my cousins (lives in and was raised in bush Alaska) was telling us a story about her young son, then six. While he was at school, his pet goldfish had died, and she spent half the day worrying about how she was going to tell him, and how he would take it -- I guess he was quite attached to the little fish. So he got home from school, and she told him, "Your goldfish died today." And he looks a little surprised and says something profound, like "Oh." My cousin says, "What shall we do with it?" And her bush-raised little son says, "Can't we eat it?" :D Well, duh, Mom -- isn't that what you are supposed to do with fish?!? :D

1/4 Cup Mayo[Hellmanns]
1 Tbs. Dijon Mustard
1 tsp. dill relish
Pinch of salt [fine grind]
Fresh ground WHITE pepper to taste
1/8 tsp Fresh Garlic[ fine minced]
Mix well & chill 30 minutes.
Serve with fish. Bon appetit!:lol:

FISH SALAD WITH REMOULADE SAUCE

1 1/2 lb. white fish, such as bass, pike, halibut
Poached in court bouillon (see page Fish section)
4 hard cooked eggs
8 anchovy fillets
4 lettuce leaves
Lemon slices or wedges

SAUCE REMOULADE
2 c. mayonnaise
1 tbsp. prepared mustard
1 tsp. anchovy paste
1 tbsp. each chopped capers & gherkins
1 tbsp. chopped parsley
2 tsp. chopped fresh herbs, such as chervil & tarragon (or sub. 1/4-1/2 tsp. dried tarragon)
Salt & white pepper to taste

Combine all the sauce ingredients, cover and refrigerate for 1-2 hours.

To Assemble: Fillet the fish and cut in serving pieces. Arrange each one on a lettuce leaf. Split the hard-cooked eggs lengthwise, place an anchovy fillet on each and arrange between the pieces of fish. Adjust the consistency of the sauce, if necessary, by thinning with milk or water. Lightly coat the fish with the sauce. Accompany with thin slices of brown bread and butter.

I dated a gal who ate guacamole and mayo squished together in a bowl. :kk1:

I hated both..............but I liked her.

She had no sense of taste, hence her dating me...... I guess. :rolleyes:

POJ, that second recipe sound pretty good.
