Jerusalem Artichoke recipes?

Has anyone here ever grown Jerusalem Artichokes? I finally got my order of them from Gurney's. I have never eaten them, but thought it would be a good thing to grow for a survival type food. I was hoping somebody would have some recipes they could share. I know you can eat them like water chestnuts and potatoes, but was hoping for something a little more interesting.
Can anybody help?

Eat them raw and peeled or stir fry and you can pickle them. Don't forget to put very heavy mulch on top of them in the fall so you can dig them all winter! I just got mine this year too!:)

Hi Deemy,
This should be interesting! I wondered if you would be able to can them, since they don't store well like potatoes. I'm allergic to vinegar, so I wouldn't be able to pickle them.
I'm working on the spot I'm going to plant them in. I'm still digging out huge rocks and only have about a one and a half foot space done so far. I bought a miners pick to make it easier, but it's been raining the last two days so I can't go out. I thought I was only getting one tuber, and I got about 8, so I had to change where I was going to plant them.
I hope SOMEBODY here likes them after all this hard work, LOL!

Jerusalem Artichokes are great! I like them raw in salads .

dig 'em up soak them to get the soil off, scrub them and slice.

They keep comming back year after year. They grow about as tall as sunflowers and have flowers that look loke black eye'd susans.

No I don't have any recipies for ya sorry.

I hope you enjoy them!

Hi PK,
Do they have to be dug up and re-planted like potatoes, or do you just leave them in the ground? I've read that they grow like weeds, so I sort of assumed they could be left alone. Gurney's growing guide didn't have any info except how to plant them now.

Just leave them in the ground. Recipe: J.A. Fritters: 4c. shredded artichokes.1 small onion grated,3 eggs,salt and pepper to taste, 1/4 c flour, 2 tea baking powder'. veg oil. Peel chokes ,add onion. Mix. Add in the rest of ingredient. and mix. In frying pan heat oil and drop the mixture by spoonfuls into hot oil. It's just like making potato pancakes! I also know you can peel and make just like mashed potaotes but I was told by the guy that gave me my chokes that they are watery.

An older friend of mine suffers a lot from stomach pains, and years ago I had remembered reading Edgar Cayce recommending Jerusalam Artichokes for a variety of ailments. I had my friend try them, and he said he could eat pain free when he eats them. I think he said he likes to drink the juice or broth. Anyway, here are a couple websites that have some recipes, and I'm sure you can websearch for more.

Anybody know the carb count for these things? I remember years ago they were sposed to be good for diabetics. We had a patch but before we could harvest any the goats ate them to the ground.

I ordered some from Gurney's too.... over 10 years ago.

I will warn you now, you really have to watch them.... they grow and spread all over the place!

I had heard that warning, so I planted them in a rock and brick flower bed, and they still manage to send roots out into the yard, or anywhere else they can spread. They still produce during drought or heat. You can even mow them down, and they will still produce!

You do not have to dig them up and replant them like potatoes. When you harvest them, you can't help but leave a few tiny ones, and some of the roots - and that is all they need to grow again the next year.

Too high of a carb count for me cvk. Seems like any root veggie is always high in carbs.. Tis the green stuff for us. :)
