Drinks Iced Tea Syrup Concentrate

This is actually quite good. For "tea snobs" it isn't going to be perfect ... LOL ... but it is still convenient.

Iced Tea Syrup Concentrate

10 tea bags
3 cups water
3 cups granulated sugar

Bring all ingredients to a boil in a large pot and boil for 10 minutes. Pour into a bottle and keep refrigerated. Mix 5 parts of water to one part tea syrup concentrate or to your own taste.

Oh drats, I was hoping that this was a canning recipe. We drink so much ice tea that I'd love to be able to can the syrup and set it on the shelves for the days that just pile up on me.

I think you can (pun intended) ... It really isn't that much different from the tea jelly recipes I have, just with the additional pectin to the jelly. It is certainly worth the experiment. I know they are selling this stuff at the grocery stores these days. Lusianne Tea has these little foil packets you open and pour into more than a liter of water ... might go up to a gallon. I keep them at our BOL and they aren't bad at all, you can adjust their strength by adjusting the amount of water you use. I think the Amish stores - some of them anyway - have tea concentrate in bottles. Last year I saw sassafras tea concentrate and some fruited tea concentrate in addition to regular tea concentrate.

I think I'm going to try it this year. I just can't figure out the timing. But I figure if I add the sugar I can use the canning time for basic syrups. Right now I make two quart size jars of "concentrate" every day. We just drink that much. Although we've been taking a break lately b/c I got a really really good sale price on some fruit juices that don't have apple in them. (And that Munchkin likes!) It would really be nice to have some on the shelves for those days that my energy gets up and goes without me.
