As promised--
Plain Bagels
4-4 1/2 c all purpose flour
2 pkgs active dry yeast
1 1/2 c water or 1 c water + 1/2 c dry white wine or beer
3 Tbs sugar
1 Tbs salt
In a large bowl, combine 1/2 c flour and yeast. In small saucepan, combine water or water +, sugar and salt. Heat just til warm (115-120 degrees) Add to dry mixture in bowl. Beat at low speed of electric mixer 1/2 min, scraping sides of bowl constantly. Beat 3 min at high speed. By hand, stir in enough of the remaining flour to make a moderately stiff dough. Turn out onto lightly floured surface, knead til smooth and elastic (8-10 min) Cover, let rise 10-15 min. Cut into 12 portions. Shape into smooth balls. Punch hole in center of each with a floured finger. Pull gently to enlarge to 1 1/2-2 inch hole working each bagel into uniform shape. Place on ungreased baking sheet. Cover. Let rise 20 min. Broil 5 inches from heat for 1 1/2-2 minutes on each side( NOT BROWN) In a large pot-combine 1 gal water and 1 Tbs sugar. bring to boil, reduce heat to simmer. Cook 4 large bagels at a time turning once for 7 min. Drain on paper toweling. lace on well greased baking sheet. Bake at 375 degrees for 25-30 min til tops are deep golden brown.
