Misc I need a good recipe for Ham and Potato Soup

I'm doing my once a year hamapalooza. It's the only time of year that I can find Munchkin safe hams at somewhat good prices. And Sam's Club took good prices to a whole new level this year.
Anyways, I crockpot glaze the ham and then separate it into meals for the freezer. The ham is for him. The bones with remainders I make soup with. But this year I'm doing extra and I already have about 20 meals of ham and bean soup. I need some variety.
A friend suggested ham and potato soup. So I would appreciate any TNT recipes, please. Even more, I would appreciate tips for being able to freeze it or can it. I may be making it with a coconut milk (about the equivalent of 2% milk). That depends on whether I get to the store before I make the first batch. But it's a coconut milk that I know, without fail, works like regular cow's milk.

Like Horn, I just use a basic potato soup recipe, and add ham. Basic recipe usually means (sorry, I don't HAVE a "recipe", with amounts... potato soup was a staple at our house in the days with no money and 4 hungry teens (but with all the potatoes I could grow and a dairy full of cows for milk, cream and butter!) sauteeing onions in butter while cooking peeled, chopped potatoes in an appropriate broth (usually chicken, but you could use water with ham drippings added, or a ham broth boullion, or simply salted/seasoned water... I've used just homemade seasoned salt- a Lawry's clone, I've posted the recipe for it here before- and it was fine). Once the potatoes are cooked through, I pull a few out and mash them (to thicken the soup), add the sauteed onions, and then cream (or evaporated milk if cream isn't in the budget).

In your case, this is when I'd also add the cooked ham... if it can stand some more cooking time to tenderize it, I'd hold off on adding the milk for a bit, add the ham to the potatoes/onions/broth and simmer until the ham is at your preferred doneness, and THEN add the milk. For dairy milk, at least (no clue about coconut milk, but I'm guessing it wouldn't matter for it), you want to avoid boiling the soup after the milk has been added, as it can curdle/change texture.

TNT - tried and true. Which is exactly what you gave me. I don't need measurements most of the time. But I won't get to try it until Wed or Thurs. My son and I both caught a really nasty infection.
No coconut milk doesn't tend to curdle. At least not the stuff meant to be a replacement for regular milk. And the ham is already pretty tender after 3 hours in the crockpot with a brown sugar/honey/pineapple glaze.

I caught a stomach bug out of the blue early last week... I had a list as long as my arm of "to do's" to get ready for the holidays, as I was planning on being gone for a week visiting my son and getting dental work done. Ended up spending three days in bed (and believe me, being sick enough to NOT be able to do anything isn't common for me at all! I tried cooking supper the second night- the minute I smelled the food cooking, I was back in the bathroom... hubby ended up finishing the meal)

I did manage to cook all hubby's food for the week Friday, just before leaving early Saturday morning. But I'm still trying to catch up on a whole bunch of stuff that must get done by Christmas. Hoping that hubby doesn't bring any more fun "gifts" back from his bus driving job until after the holidays, at least!

There are two versions of the flu and a stomach bug going around here. The flu shot isn't working. Of course we manage to avoid those by being careful only to catch a nasty and painful respiratory bug. I feel like a dragon that hiccupped at the wrong time while firebreathing. We are supposed to drive 4 hours to visit family on Christmas day and I don't know that we are going to make it.
As for the being so sick I can't do anything - it's not normal here either. Today I finally gave up when I realized that my son felt exactly the same way. I grabbed all the meds we needed, and drinks, and retreated to bed.
