HELP!!! Groan...low carb SIL b'day

Very much loved SIL has requested "low carb" grilled/bbq chicken for his b'day dinner.......what else might I serve for his once a year birthday feast?

And what kind of "low carb" dessert?

Any suggestions MOST appreciated, as his birthday is Saturday the 24th!
Will have to shop tomorrow if need be.

You can find cheese cake recipes on here that are for low carb eaters. LC cheese cake is a staple around here. ;)

Rule of thumb Nothing with flour or sugar.
Green vegetables. So that means no corn on the cob. But lots of green salad. Coleslaw is another good one.. hold the carrots.

No low fat items. eg full fat ranch dressing is good as are oil and vinegar.

Good nibble foods are devilled eggs. Once again only use full fat mayonaise.
Celery with cream cheese. Carrots are no once again stick with green veggies and it should be fine. A full fat dip with cauliflower and broccoli is good too.

I could go on for a long time as we eat the low carb way and I have made some up of my own that are easy. I hope you enjoy the party.

Breyers is making a wonderful low-carb ice cream now. There are lots more options in regular grocery stores than there used to be. Everybody is getting in on the craze. You might also check health food stores for their low-carb brownie and cake mixes, but I've never tasted any of them myself.

A good friend of mine received a flower arrangement shaped like a birthday cake for her birthday. Not tasty, but cute and clever. :)

Make Faux Tater salad!

Break a head of cauliflower up and steam it, let it cool and make your usual tater salad with it! It's great and I have served it several times and no one even knew it was cauliflower and not taters til I told 'em.

I use the cauliflower, diced onions, diced celery and chopped boiled eggs. Make a dressing of mayo, mustard, sugar subsitute, a little vinegar, a little cream, salt and pepper. Make it ahead and let it sit for a while. Yum yum!
