This is the first year for growing many of them. I usually grow German White because it grows well for me, it has large cloves and is a nice mild garlic. DH prefers Roja, it is a very tasty garlic. This is the first year I have grown it and it looks like it has done well. The first four bulbs are large and have large cloves. This was the first year for Music, Red Rezan, Marjean and Rose de Lautrec which I forgot to mention. The Rose de Lautrec was a whim and as I expected it did not do well. Very small bulbs, but this was expected because it is a hot climate garlic and I live in a cooler climate. I think the Music has done well, but I won't know until I pull it. I have grown Hillside before and it does well and it a good flavored garlic.
The one I always go back to is German White and I will probably continue to plant Roja and maybe Music.
I always grow hardneck. I prefer them for keeping quality, flavor, size and how well they grow for me. I see you are in Alabama so the Creoles might do well for you, that is what the Rose de Lautrec is. It is a pretty pink garlic that is popular in France. I can't tell you about the flavor as I haven't tasted it.
I can update my experience with the various kinds as I pull them and use them.
