3 TBLS grated Ginger
3 TBLS Sugar
1 TBLS Molasses
4 Cups Filtered Water
This is your "Bug"
Combine all ingredients into glass jar. Cover with cheesecloth and place on counter. Each day for the next 5 days add 1 TBLS Ginger and 1 TBLS Sugar.
On the 6th day ...
Combine
1/2 Cup Sugar
1 TBLS Molasses
1/4 Cup Lemon Juice
3 TBLS Grated Ginger
4 Cups Filtered Water
Bring to a boil, then let simmer for 45 minutes. Let come to room temperature. Add the Ginger Bug, Mix and place in a mason jar with lid. (this is what Ive done, when it carbonates I release the lid a little and then tighten it up again. After I do this for a couple of days-let carbonation build up, then I put into the Grolsh bottles and refrigerate)
