…… Elderberries

I have been limited in mobility this year so not a lot of checking around the homestead. Yesterday i took the Kubota side by side to back side of barn and found what I think is elderberry bushes.
That are about six foot tall and cover 7 foot section of the barn. I guess I will harvest them and looking for suggestions to preserve what will amount to about 5 gals of berries. Should I dry some and tincture some. How is best to dry?

Poke(berries) will completely take over an area if you aren't careful. Don't let them set fruit. The birds will spread it far and wide. They have a very big/deep tap root and the seem resistant to a lot of herbicides. Best way to get rid of them is to cut off the stalk and put the herbicide right on the remaining stem or better yet just dig it out.

Thank you. We will do this since we are fighting china berry trees also. I had ask for suggested to dry but the question was reported and removed.

Pokeberries are VERY POISONOUS!!!

YOU CAN EVEN BE POISONED BY HANDLING THE PLANT. DO NOT EAT THESE AND WEAR GLOVES WHEN CUTTING OR HANDLING STEMS!!!
