I found that cheese which I'd frozen would get moldy lots faster than usual when thawed and back in the refrigerator.

This also happened to cheese that was mailed to me here in Arkansas in the winter from a sister who lived in Wisconsin

I'm going to find a good pound cake recipe that uses lots of eggs. That would be great in the freezer for us. DH likes a little something sweet with his coffee in the morning and I just don't cook the sweets I use to. The pound cake would have more protein and less preservatives than the store bought stuff he's been buying.

Not yet but I'm going to be looking for one...the more eggs the better. When I find a good one I will share.

Of course there's also egg custard and rice pudding but I haven't made either in so long, I'd have to find a good recipe for those too. If you had a good use for the yolks you wouldn't use, angel food cake would use up a ton of whites. The best use would probably be deviled eggs because nobody ever makes enough of those at a family event.

Store bought sweets don't tempt me all that much but home made is a whole other story.

My DH lost so much weight with covid, I'd be willing to deal with it if I could put some weight back on him. His whole taste has changed and it's not looking like he will be going back to his old eating habits any time soon. He went from eating way healthier than me to not being able to get enough fried gas station stuff and all kinds of sweets. He's so happy he can eat again that he's going for it.

I love homemade sweets too much! After Cary's last bout with sepsis, he lost his appetite, and has never full regained it. He lost around 20 lbs, and hasn't gained that back, either. I don't mind cooking sweets for him, but I have to eat them, too. That's my problem. He could stand to gain those 20 lbs back, I need to lost 20 lbs!

Aren't there some that you aren't real fond of, but he loves? Hubby loves gingersnaps... not me! But if I make snickerdoodles, I can't resist them! So, if he's looking for a treat, I'll make gingersnaps...LOL!

That's us exactly! Sepsis is scary stuff. I dealt with that a few times taking care of my father. DH had such a horrible ear infection with covid that I was afraid it would go septic and that terrified me being that close to his brain. It took three rounds of antibiotics to clear it up. It did something weird to his ability to swallow for a while.

That's a problem here, LOL! We both like the same things. I can't think of anything he likes that I don't. He's been wanting some homemade peanut butter cookies. I haven't made them, cause they're my favorite. I just don't have much will power when it comes to good food.

DH had such a horrible ear infection with covid that I was afraid it would go septic and that terrified me being that close to his brain. It took three rounds of antibiotics to clear it up. It did something weird to his ability to swallow for a while.

Cary had sepsis twice, and a partial right kidney removal (cancer) all in the same year. He lost all his weight from that. Then, we both had omicron, and that really caused a weight loss for both of us. I've gained all of mine back, but he hasn't.

I took steroids and that caused me to gain back all I lost plus a little extra. I'm slowly trying to lose that.

I vote to pickle them. Just picked up a gallon of vinegar based pickeling juice for less than $3 bucks. I like to add a few hot and mild peppers and even some union's to my pickled eggs.

I'm going to boil and chop them up and give back to the birds. We're at about 150 eggs in the frig now. "Everyone" bought chickens during Covid, so my customers have dropped off. In WA I can sell from my home without a license. My usual customers order them and I set them out in the cooler in front.

By the way, in lieu of oyster shells (at $2/lb), we recycle the egg shells. They love them.
Update: ducks won't eat them. Do chickens eat scrambled eggs? Dogs get 1 each per day, no problem. Cat says ewww.

BTW, just made custard. Wow!

2 cups whole milk
2 duck eggs
1/4 cup sugar (too much, will try half that)
1/8 t salt
1/2 t vanilla

325 degrees in cups with a water bath, until they puff up.

How long will they last like that?
I have gotten mostly thru mine by doing the scramble and freeze method.
