FOOD Duck - an encore

As many of you know, I did duck for D-Day, er, T-Day. But I didn’t have enough pan drippings for much gravy. So, I picked up another duck today. I’m going to boil it down for broth, portion it out and freeze it, so I can make gravy once in awhile. The fresh ones were all gone (they closed-out) so I had to get. Frozen one, which is thawing in the sink now.

There is NOTHING like duck gravy. And this time, I can dice up the meat and toss it in as well.

We duck hunted a lot when I was a kid.

Hunted the salt marsh of south Louisiana, close to the gulf.

Haven't had any in many years.

I see them on the tanks around here, not worth the effort for one or two, IMO.

Duck gravy...yum.

I had a German friend who spread duck fat on bread as her holiday treat. I prefer duck in orange sauce or Peking (pressed) duck. I grew up eating duck and pheasant my Dad shot at a hunt club. That type of duck did not have a lot of fat, that I recall.

Sounds interesting. Never had duck, or for that matter goose, before. Did have a real fresh killed Texas wild turkey one year on the farm. Grandpa shot it with his old .22 rifle. Wasn't much to it once we got it dressed out. Not bad, just different.

I've had crispy skinned duck at a couple of Chinese restaurant. Fantastic!

A local German restaurant had baked duck which was the house specialty. Spätzle (noodles) smothered in gravy with blaukraut on the side.

I had Peking duck once. I was not favorably impressed. Duck with orange sauce is beyond cliché IMO. I found goose disappointing too.

Did you post anywhere how you cooked your duck? Looked but couldn’t find anything. Wife bought a frozen duck (expensive, organic, etc as is her way) about a year ago. Figure it’s time to do something with it. Never cooked duck before. Treat it like a chicken? Like a small turkey?

However you cook it, I would use a good thermometer to keep it from drying out.

Goose is not great. We had goose every year for Christmas for years. Grandpa had it growing up so he brought it along. With grandma and grandpa passed, we've since switched to ham, which we like much better.

What I read were recipes for cooking it in a dutch oven. It called for covering the wings and legs with foil to keep them from drying out, then removing the last 15 minutes to let em brown.

I have a duck in the freezer too, but never having cooked one, have been waiting on the right group of guests for it's debut...

At best, a duck will only feed about 3-4 people. And you don’t want a dinner party to be your first attempt. Better try it now.

Or....if there's something 'off' about the goose, you could have a search engine.... duck duck go.... :D :poop:

..I am laize faire in almost everything, definitely my hosting! : )

On the other hand, I could use the freezer space, so may do it soonish, on a night you're online too- talked yourself into work there!

Yeah... ducks just aren't meaty.
Dennis, what are you doing for pan droppings for your gravy? Boiled duck broth alone (starting with a raw duck) will not give you the results you are hoping for.

I was about six years old visiting my Old World grandparents in the Lincoln Square area of Chicago.

Much to my surprise and delight, on the back porch they had a big white goose sitting in a large box filled with shredded newspaper. It was very tame and I fed it lettuce. Once in awhile it would let out a honk.

Two weeks later we were back at the grandparents for Thanksgiving dinner. The goose was no longer on the back porch.

I did my first "Oh Snap" then.

Duck is my favorite bird to eat. If it’s on the restaurant menu, everyone knows that’s what I’m having. Not a bad idea to get another one cooking for the stock!

I have duck in the freezer; I think that bird has moved up in the queue :) Sigh, first I need to make turkey soup and get that canned up!
