Does anyone have a recipe for cream gravy-white gravy that requires not shortening,oil or lard? Want to make a few gallons of gravy mix that will only need to have water added.

Something like this?

White Bean Gravy (from Country Beans by Rita Bingham)

2 C. boiling water
2 tsp. chicken or vegetable soup base
3-4 Tbsp. white bean flour

Whisk bean flour (adding flour to desired thickness) into boiling water and chicken or vegetable soup base in a small saucepan. Cook over medium heat for 3 minutes. Blend if desired. Makes 2 cups.

Flour mixed in cold liquids can be added to sauces as a thickener without using oil or other fats. If you want to make a dry base for cream gravy try using powdered milk and following the reconstituting guides add 2 Tbs flour for each cup of milk (when reconstituted) mix thoroughly and then mix with cold water before heating. If you like you can add seasonings to the dry mix. There is also a product called Wondra flour that is granulated and can be added directly to hot liquids without clumping. Hope this helps. BG
