Recipe Chorizo, I need recipes

Neither here nor there.
I have a pound and a half of ground chorizo, not in links, in the fridge that thawed partially and I was loathe to refreeze it. What dishes would you use it in? Normally I'd make seafood paella but don't have the seafood or time right now.

HELP!!!

Breakfast burritos with scrambled eggs, hash browns and Green Chili!

Yum! I need to stock up on some more of it, but most of the stuff here is way too greasy and nasty tasting.

What brand did you get? I prefer the Old Timer links when I can find them.

Fareway housemade bulk chorizo, so it's not as fatty as the commercially available stuff. Fareway is a chain of grocery stores here in Iowa.

I know and love Fareway from South Dakota - unfortunately, none in Colorado..... Big sigh, so I have to buy what we can actually eat. Love Fareway's chuck eye steaks - if you want to treat yourself to a poor man's rib eye (without the bone) this is it!

Every time they have chuck eye steaks for sale we buy them, they are delicious and have less fat than a ribeye. We love all of their meat, to be honest their breakfast sausage is the bomb.

Anything you can use regular ground sausage in you can use chorizo. I use link chorizo in my garbanzo bean soup but the ground stuff can be mixed in regular ground beef and sausage for meatballs, mixed in a lasagna or spaghetti sauce to add a little oomph, etc.

sausage rolls
quesadillas
like ground sausage for breakfast
use it to stuff a meatloaf
use it to stuff burritos or fill taco shells
top a baked potato

Just lots of stuff. Just remember that chorizo can be spicy. Taste test yours by browning a little bit up. I also find that the grease is red-orange and can stain stuff so what the splatter.

It makes real tasty hash!

Potatoes, jalapeno, bell pepper, onion, garlic, salt, pepper. Scramble up some eggs, throw them on top, cover until cooked on med heat, put some grated cheese on and you've got a hearty frittata!
