Bev ask me to post my Cheese Batter Bread recipe over in Dennis's bread thread. I thought it would be more appropriate here.

Cheese Batter Bread

1 pk yeast
1 c warm water
2 Tlbs sugar
1 Tlbs softened butter
1/2 tsp salt
1 egg, beaten
3 c all purpose flour
1 1/4 c shredded cheddar cheese
1/2 tsp of any herb or spice of choice
1/3 to 1/2 c of finely chopped fried bacon (optional)

In large bowl, dissolve yeast in water. Add sugar, butter, salt, seasonings, egg, bacon, and 1 cup of flour. Beat until smooth. Add 1 cup of cheese and remaining flour. Stir for 1 min.

Cover and let rise til double, about 30 mins. Stir batter down, about 25 strokes.

Spread evenly into greased 9 x 5 x 3 loaf pan. Cover and let rise til double, about 20 mins. Sprinkle with remaining cheese.

Bake 375 for 25 to 30 mins, or til golden brown.

This recipe makes a light fluffy, not too dense loaf. It's great toasted for breakfast.

Well, that was easy. First rise was taking longer, so I put it in the oven for another half hour. Second rise was right at 30 minutes. Cooked it for 25 minutes and it looks perfect. I’ll take a picture when it cools a bit.

I chose to just do the cheese for this first try. No bacon or spices. If it tastes as good as it looks, there will be many more iterations.:)

Just made this, it’s on it’s first rise now. What herbs did y’all use? All I could think to use was Italian seasoning.

The recipe calls for poultry spice, or spice of your choice, and Italian herbs sounds good. Really, you can use whatever spice or herb you like. I've made it using caraway seeds, and that's good. I like to experiment. I don't think I would want caraway seeds in a breakfast loaf, though.

This is so tasty and was easy to make! I substituted bacon fat for the butter and didn’t add bacon bc I was too lazy to cook any. Next time I’ll add bacon and a different seasoning. The Italian seasoning is good but I’d like it to be more neutral so I can eat at breakfast and for sandwiches. Oh, my bread pans are smaller so I split between two pans and reduced the time to 20 minutes. I’ll definitely be making again. Thanks for the recipe!
