Recipe can anyone share a recipe for SIMPLE shepherds pie?

once upon a time I had a recipe for quick and easy shepherds pie . . . but I can't seem to find it. I know WHAT but don't really know HOW to assemble it all. my hope is that someone will have a road map to that end point.

my plan is to use either ground beef, chicken, turkey or veal; toss some mix veggies in; add cheese and mashed potatoes, the necessary liquids (chicken or beef stock maybe?); toss it all into a big glass pan and pop it in the oven.

what I'm hoping for here - if not a currently existing recipe - are some of your thots and direction regarding amounts, times, etc etc . . .

I don't have a recipe. I just wing it based on my memory or cafeteria food I had growing up. What you're planning is pretty much what I do. I know it may not be right, but I take a packet of gravy mix and mix it in with the fillings and broth. I might sprinkle the cheese either into the potatoes or sprinkle it on top. JMHO but Shepard's pie is one of those things that you can modify depending on what you have on hand or what you like. Heck, I've thrown sauteed onions and mushrooms into the filling too. I had them and they needed to be used.

Here's a simple, classic Shepherd’s Pie recipe that’s easy to make and hearty enough for a full meal:




Simple Shepherd’s Pie Recipe


Serves: 4–6
Prep time: 20 min
Cook time: 30 min




Ingredients:​


For the meat filling:


  • 1 lb ground beef or ground lamb
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tbsp tomato paste (or 1/4 cup ketchup)
  • 1 tbsp Worcestershire sauce
  • 1/2 cup beef broth
  • Salt and pepper to taste

For the mashed potato topping:


  • 2 lbs potatoes, peeled and chopped
  • 2–3 tbsp butter
  • 1/4 cup milk (or cream)
  • Salt to taste
  • Optional: 1/2 cup shredded cheese (cheddar works well)



‍ Directions:​


  1. Make the potatoes:
    Boil potatoes in salted water until soft (about 15–20 min).
    Drain, mash with butter and milk. Add salt to taste. Set aside.
  2. Make the filling:
    In a large skillet over medium heat, cook ground meat until browned.
    Add onions and garlic; cook until softened (about 5 min).
    Stir in tomato paste, Worcestershire sauce, broth, and frozen veggies.
    Simmer for 5–10 minutes until slightly thickened. Add salt and pepper.
  3. Assemble the pie:
    Preheat oven to 400°F (200°C).
    Spoon meat mixture into a baking dish.
    Spread mashed potatoes on top evenly. Add cheese if using.
  4. Bake:
    Bake for 20–25 minutes, or until the top is golden and bubbling.
    Let sit for 5–10 minutes before serving.

Here is the base recipe that I started with years back. Every time I make it it is different because I usually just use whatever I have handy. Sometimes instead of mashed potatoes I top it with tater tots.

Easy Shepherd’s Pie Recipe
Ingredients

1 1/2 to 2 pounds potatoes (about 3 large potatoes), peeled and quartered
8 Tablespoons (1 stick) butter
1 medium onion, chopped (about 1 1/2 cups)
1-2 cups vegetables—diced carrots, corn, peas
1 1/2 lbs ground round beef
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice



1 Boil the potatoes: Place the peeled and quartered potatoes in medium sized pot. Cover with at least an inch of cold water. Add a teaspoon of salt. Bring to a boil, reduce to a simmer, and cook until tender (about 20 minutes).

2 Sauté vegetables: While the potatoes are cooking, melt 4 tablespoons of the butter in a large sauté pan on medium heat. Add the chopped onions and cook until tender, about 6 to 10 minutes.

If you are including vegetables, add them according to their cooking time. Carrots should be cooked with the onions, because they take as long to cook as the onions do.

If you are including peas or corn, add them toward the end of the cooking of the onions, or after the meat starts to cook, as they take very little cooking time.
3 Add the ground beef, then Worcestershire sauce and broth: Add ground beef to the pan with the onions and vegetables. Cook until no longer pink. Season with salt and pepper.

Add the Worcestershire sauce and beef broth. Bring the broth to a simmer and reduce heat to low. Cook uncovered for 10 minutes, adding more beef broth if necessary to keep the meat from drying out.
4 Mash the cooked potatoes: When the potatoes are done cooking (a fork can easily pierce), remove them from the pot and place them in a bowl with the remaining 4 Tbsp of butter. Mash with a fork or potato masher, and season with salt and pepper to taste.

5 Layer the meat mixture and mashed potatoes in a casserole dish: Preheat oven to 400°F. Spread the beef, onions, and vegetables (if using) in an even layer in a large baking dish (8x13 casserole).
Spread the mashed potatoes over the top of the ground beef. Rough up the surface of the mashed potatoes with a fork so there are peaks that will get well browned. You can even use a fork to make creative designs in the mashed potatoes.

6 Bake in oven: Place in a 400°F oven and cook until browned and bubbling, about 30 minutes. If necessary, broil for the last few minutes to help the surface of the mashed potatoes brown.

Suggested variations:

Put a layer of creamed corn between the ground beef and the mashed potatoes.

Sprinkle grated cheddar cheese over the top of the mashed potatoes before baking.

I just use whatever there is to get rid of. Some kind of (pre-cooked) meat, some kind of complementing veg conglomeration (canned, frozen, fresh or leftovers), canned cream of something soup, stock, cream or milk, maybe some gravy mix (depending on the meat), maybe some dried Parmesan, onion, garlic, black pepper. Cover with buttered mashed potatoes or even Bisquick batter. Cornbread batter works too, and is different, depending on your ingredient "theme". Can do more Parmesan on top if you feel like it. In the oven at 350 until it's bubbling through well in the middle (around an hour in a 9x13 pan) and there ya go.

Technically with this, everything is "cooked" before it ever goes into the oven. It really only needs to heat/burble all the way through, meld flavors and brown/bake the top.

run time 18 minutes but you cut the time in half by putting playback speed on 2.

Whenever I need a recipe for something but I need a simple/easy version I just go to youtube and type in "easy" before the recipe name. In this case, I searched for "easy shepherd's pie recipe" and several videos came up. Works the same on allrecipes.com.

I fry up 1# ground lamb with onion & garlic; salt, pepper, a little cumin & oregano. Don't drain.
Mix in peas & carrots.
Make mashed taters - sour cream & a little butter & garlic powder is nice. Sometimes, I leave them more stiff, than creamy; it's a better texture when it's layered & baked.

Start layers with taters, meat mix & cheese & repeat in 2 qt casserole. End with taters & cheese.

Set oven to 350 (or adjust for slow/fast oven - I use 365 in my oven) and bake for 45 mins or till top is browned.
