I bought this book as I have had the need (desire, feeling, whatever) to dry more foods this year. Mary Bell's book is good, but this book is great! She goes over in detail how to dehydrate, the effects of drying on vitamins, troubleshooting problems with dehydration.

The recipes are not just for dehydrating items, but for how to use them after they have been dried. She gives recipes for leathers and powders. I"ll admit I haven't tried many of the recipes - I'm waiting to make powders until the woodstove is going and I won't have to use as much electricity to cook veggies down. But man, they sure sound great:

Onions and Collard Greens with Sweet-and-Sour Bacon Glaze, Barley Vegetable Soup, Stuffed Eggplant Rolls...

There are backpacking recipes as well.

I don't know if we have a rating system or not, but I'd give it a 4.5 out of 5 stars.

Thanks for the recommendation....no finances to get it myself at this time. If you ever have time could you post a few favorite recipes? Would love to try something new
