BOL Food: SPAM Fajitas ... ROFL!!!

I keep food stored up here at our BOL because I want to actually be able to get here and stay here if an emergency should happen and we need this hidey hole. What is the sense of having a BOL if you starve after you get there?

But since there is no way that I'm going to rotate food by carting it back to my primary location every time we visit, on occasion I'm forced to improvise. This is one such meal that I just fixed for dinner tonight.


SPAM Fajitas
Makes about 8 servings

1 green bell pepper, cut into julienne strips - my mother gave me some that came out of a friend's garden. She also blessed me with 8 gallons of green beans that she cleaned and snapped for me but those are going in the canner tomorrow

1/2 onion, cut into 1/4-inch slices (I used onions rings that I'd dehydrated myself and just rehydrated them for this recipe)

1 (12-ounce) can SPAM, cut into julienne strips

3/4 cup salsa (used my own homemade brand but you could use store bought. We also like our chunky style but again, just go with whatever your family prefers)

8 (8-inch) Flour Tortillas, warmed (I make my own but the ones out of the package are just fine and I've used them on camping trips with no problems)

2 cups shredded lettuce (wild greens from my adopted aunt's garden rather than lettuce. The wild greens gave it a different taste and texture but it wasn't bad at all)

1/2 cup cheese (I had some packaged cheese leftover from a Christmas basket. It was a hard cheese but stored in plastic and wasn't bad.

1/2 cup nonfat plain yogurt (used sour cream instead since I didn't have yogurt on hand)

Spray large nonstick skillet with cooking spray. Heat skillet over medium-high heat. Add green pepper and onion; sauté 2 minutes. Add SPAM; sauté 2 minutes. Stir in salsa and heat thoroughly. Spoon about 1/2 cup SPAM mixture onto each flour tortilla. Top each with 1/4 cup lettuce (greens), 1 tablespoon cheese, 1 tablespoon yogurt/sour cream and salsa, if desired.

I love fajitas and make them often, but I have to admit, I never thought of using Spam! Most of the time I use chicken and sometimes I use beef ... but I will be brave and try the Spam fajitas.
