Baked Stuffed Pumpkin

1 medium pumpkin
5 grannie smith apples
fresh ginger
1 Tbsp. grated nutmeg
1 Tbsp. cinnamon
1 cup chopped walnuts
1 can whole berry cranberry sauce
1 lg. can chunk pineapple, drained
1 can mandarin oranges,drained
3/4 cup brown sugar
1/2 c. golden raisins
1/2 cup rum (or could use 2 tsp. rum flavoring)
optional - whipped topping

Cut top of pumpkin and scoop out seeds. Peel, core and chop apples. Press a little ginger through garlic press (or grate it) Grate nutmeg. Add remaining ingredients. Pour fruit into pumpkin & replace top. Bake at 350 degrees for about 1 hour. Remove from oven. Stir - some pieces of pumpkin will fall into mixture. Spoon over pound cake, quick bread, or ice cream. May garnish with cool whip topping.
