Prep Genrl are you pumping up your preps again?

Until this year I have never canned pork butts. They are great canned. The fat congeals in the top of the jar so it is easy to remove most of it. Heat it up add some Barbeque sauce or not and make some nice pulled pork sandwiches or just eat the meat with some sides.

I am also doing beef meatballs and stew but this pork is the best.
How do you prepare the pork for canning, do you cook it first or cut in chunks and raw pack or…? It sounds like something I’d like to have on the shelf.

So far we have packed them raw.

We have done Pork, beef, chicken and turkey. Wait also some fish to test out for the cats.

For the storm, we just replaced our 4 battery packs. They allow us to recharge phones / tablets without having to go outside and use the vehicles or generator.

we did turkey one year, bought a couple on special after xmas. When we opened the jars it smelled like diesel fuel, totally inedible. If you're going to do turkey make sure to find a "fresh" one that has not been "basted" or injected with stuff. If I ever do turkey again it'll be one of the plain organic ones from our local co-op.

Not a problem, at least you know what to expect when you open a jar... that it may smell bad, especially if you raw packed the turkey. I've had people tell me that if the turkey is pre-cooked aka hot packed you it smells just fine.

I’ve canned pork before but I used pork loin, cut into chunks, cooked it a little in a skillet before canning. I’ve never raw packed any meats, I’ve always cooked partialy before canning. That’s good to know about the turkey, I’ve only done homegrown turkeys but I’m not physically able to raise and butcher them anymore.

I raw pack it. I try to cut off as much fat as possible, but the fat floats to the top anyway. Cut it up in two-inch or so uniform chunks, I don't put anything in it just meat in pint jars. Check your Ball Blue Book for headspace and canning times.

I've been busy gathering what I would consider odds-n-ends and top-ups: Ivermectin, Beef, Cheese, Instant Espresso Coffee (Bustelo), Syringes, Soup bases (lobster, shrimp), Vitamins/Supplements, Reverse Osmosis membranes, other food items. Misc computer items. Packed to the gills.

I wish I had a freeze-dry unit, but it's not in the cards now.

I mean, just how much enthusiasm is one expected to generate in doubling down, for the five hundredth time.....pulling weeds out of the potatoes ?

What if my potatoes are already clean ?

Is there a quota mandate here ?
