My family loves casseroles, and I realize I'm a very lucky woman! I cook very similar to how she does but usually will make a big batch of something (meatballs, pork chops, chicken thighs, etc.) from scratch instead of getting it already frozen/prepared because I'm half Scot and make it a game to see how low per person I can feed us, plus I want to know exactly what goes into our food.

I've been cooking in large quantities ever since I had my first place out on my own and heartily endorse it. My rationale has always been... if I'm cooking for one meal, might as well cook for at least 2 or 3 more, right? It's easier to come up with new ideas on the fly when you cook the ingredients ahead of time (mainly talking about meat) and keep a well-stocked pantry because the base ingredients are always there. Our granddaughter is a genius at coming up with new combinations that are very tasty. She's a quick study!

I also like cooking a big batch of almost anything because ... LEFTOVERS! Cook it in a big pan and divvy up what's left after the initial supper into as many smaller (or large) portions as you want. Sometimes I do it individual portions, other times I'll split what's left into half, so 3 meals for 3 people out of one (usually) quick cooking session.

Saw this video a few days ago and thought some here might get some ideas. I did. :)

I stopped paying attention to Allrecipes.
They season everything with the prepackaged seasoning mixes.
To me, thay're too salty..

I'd rather add spices for much better flavor.

That, and the woman who does the videos looks so fake she creeps me out.
