CRISIS #10 cans of good Ketchup!

This is based upon the instant coffee crisis........

My "crisis" is that I can not find the #10 cans of good quality ketchup anymore.

They now sell the plastic with a rip off top smaller jars of the stuff.

How the heck can I put up a 10 years supply with the plastic crap. I need / demand the #10 cans. My last batch lasted 10+ years and was as good on the last day as it was the first day......

I have tried online, but they are no longer cheap if you can find any at all.

Not a real "crisis" but who cares....lol

LOL … I know your pain. All of the condiments now come in those plastic monstrosities. Personally I just make my own (can them too) unless I can get a particularly good deal in the store. Even then I have a tendency to re-can them into small units and then repurpose the plastic containers. It is even hard to find the glass bottles of ketchup in the store these days … you no longer have to sing "anticipation" as with the squeeze bottles you can splatt it out as fast as you need it. LOL

Have you looked into checking at a restaurant supply store? There is also a chain called Gordon's.....dunno if in your area, but they have very large containers of food items....seems like that would be a likely place.

Yep.... all too far or too expensive to do. But that bit about the squeaky wheel. I just found it for a decent price an hour south of me. $3.56 isn't bad at all. I can get 2-3 cases and be set for a long time!

I know this may be a dumb question to some, but I don't use ketchup much.

Buying ketchup in # 10 cans.....would that have to be refrigerated once opened? I don't buy mayo or mustard in large tubs, because I'm assuming they would have to be refrigerated once opened, too. Thinking of no fridge in a grid-down situation without a generator.

Mustard does not have to be refrigerated for sure. I don't think Ketchup does either, Mayo YES !!!

Ok, thanks! Being in the South, I have always been afraid of leaving things like mustard, ketchup, A-1 sauce, and mayo outside the fridge. It gets so hot here. I don't use a lot of ketchup, but love the mustard and mayo.

Ever seen it in the fridge at a restaurant?

Ketchup can be water bath canned. Homemade doesn't keep nearly as long as commercial stuff... it will turn dark (even stored in a dark cupboard) after about 18 months. But it's so tasty, and no high fructose corn syrup!

Homemade is so much better than even Heinz and just the thought of not contributing one red cent to John Kerry in any way shape or form put an extra smile on my face. But you are right about it turning dark is it still good.

Noticed years ago that my brother did not refrigerate mayo.. Said that mayo did not have to be refrigerated .. Started doing the same thing.. haven't refrigerated mine it in years.. All we use is Blue Plate so can't speak for the others .. Jar did not even say refrigerate after opening.. Wife went to a Sysco food show and the Blue Plate guy was there so she asked him about not refrigerating the mayo -- He said that because of the PH -- that no bacteria could grow in it... She said " So that's why the jar doesn't say Refrigerate after Opening".. He said -- that's right .. The next jar we bought had " Refrigerate after Opening" on it.

I've read that if it has vinegar in it - does not have to be in the fridge. I leave ketchup out all summer and salad dressings too as long as they have vinegar.
