It's Monday and I'm putting together red beans and rice. Soaked small red beans overnight already and got them started cooking with chicken broth and some seasonings. Will add Andouille when things cook down a bit, pot's too full just yet.

Will make a pan of cornbread and a pitcher of iced tea at suppertime, plus a pan of rice, and look out world :D

My local grocery store in AR carried the Holy Trinity, in the produce section, all diced up and ready to go, in medium sized see-through containers. If pressed for time, this was mighty handy.

I was always under the impression the "Trinity" is Onions, Celery and Garlic...not peppers.

If you've ever tried preparing a Cajun or Creole recipe, like gumbo, jambalaya or étouffée, you've probably noticed a trio of vegetables common to the ingredient lists of all three: onions, green bell peppers, and celery.

Together, these three ingredients are referred to in Cajun and Creole cuisine as the Cajun trinity, or sometimes the holy trinity, or simply the trinity. But what is the Cajun trinity, and why is it so important?

My wife always says she would never have married me if I didn't like lots of onions, celery, peppers, and lots and lots of garlic in every dinner.

And I do mean a lot of garlic!

My Holy Trinity is onion, bell pepper, garlic.
Never was much of a fan of celery, but I get no complaints on my Jambalaya.

Same here. Onion, bell pepper, and garlic. Cary doesn't like the taste of celery too well, so I hardly ever use it. When a recipe calls for celery, I use a little bit of celery seed, instead.

I stopped using celery yrs ago

I always ended up with over-salted food

spose it would have been easy for me to omit whatever salt was in the recipe :shr:

I even use em to make salmon ham patties, n creamed peas n new taters, Ain't. The size is nice for cooking for one imo

It was good. No one complained about it being too hot but liked the spices.

I mashed up about a third of the cooked beans in the broth to thicken it up, before I added the diced ham and sliced sausage and let it all simmer for another couple of hours.

And the cornbread was really a big hit - finally found some House-Autry yellow corn meal mix. Made here in NC ...

I use the Hormel smoked ham ( 5oz ) all the time in different recipes. My pantry is fully stocked with it. I guess I've got over 50 cans in stock. 52 cans each of a variety of canned meats is what I try to keep in storage.

I used to use Tony's but got tired of the salt, so I make my own magic now.
