I'm partial to 'Fryin' Magic' for things like fried chicken and fish; pretty much use an egg dip/flour combo for most other things.
My chicken FINALLY got thawed out enough to can
Next time it goes in one of the less expensive Coleman coolers like I keep in my van for grocery shopping than the Artic cooler; that thing kept 'em frozen - without ice! - since Monday. I had to take the bags out and put them in a washtub of water to thaw.
This is the Italian seasoned chicken breast; since I wasn't sure how the flavor would come out after being canned - maybe too strong? - I'm only doing 2 cases of it. I've got two canners going with 9 pints each in them; then will do a mixed canner of 6 pints of chicken and 3 of beef; and another canner of 9 pints of beef. If there is any chicken left over, I'll fix it for supper or lunches. The OC (but no D) is strong today - can you tell
Those 12 jar boxes are going on the shelf with 12 jars in 'em, by golly!! Hubby wanted to keep a couple of the roasts I bought whole to cook in the Dutch oven, but
I may go pick up a few more to can if I get twitchy thinking about the election.
