Starting this for Renee as I"m sure she is a canning fool right about now. One of my biggest fears is losing electricity or a freezer (especially now that they are so hard to come by) with freezers full of food. On that note, I have been canning a lot for the last month or so, trying to empty the freezer and keep up with the garden. Yesterday, I canned up 11 1/2 quarts of chicken and 7 quarts of mixed turnips and potatoes.

Another week of working every other day. Many of my co-workers hate that kind of schedule, but I find it helpful. I start meat in the roasters when I get home from work, it cooks overnight, then I can can it the next day. It also allows me some rest from one type of work to another. Today, I am off and it is hotter than blue blazes. I plan on finishing laundry, putting a load of broccoli and peaches in the freeze dryer (I try not to can and use the FD at the same time - too hard on the electricity and the FD). Most of what I need to do today is inside work - computer stuff, saving seeds from my ginormous squash and cleaning the house.

My plans for the week include more canning and gardening. I have a client coming out on Monday, so that will take a bit, but not long. I really need to get caught up on some things for the herbal business - I just dislike being on the computer doing things that are new, and especially when I feel like I don't know what I"m doing.

Good Morning, All!

I'm up staring blearily at the screen while I wait for the coffee pot to stop dripping. As soon as I get a jolt of caffeine in me, I'm going to carry out the compost bucket from last night and dump it; then get back to work canning up the remaining stuff from the freezer open door issue. I need to go downstairs and drag up a few more boxes of pint jars and jelly jars - may as well take down the basket full of canning towels and get them started while I'm down there - hope the rain holds off long enough to hang them on the line!

I'm going to get one canner of chicken vegetable soup going; then start peach jam on another burner. Hubby did bring the steam juicer upstairs for me, so once the peach jam is in jars and water bath canned, I'll dump the cherries in the juicer and get it going; then prep more jars and make more soup from the assorted meat plus frozen veggies I had in the other freezer. While I'm waiting on the canner/juicer to be done, I've got a couple of watermelon and a cantaloupe to cut up and get in the fridge, beans to snap, and some dry goods to carry in from the van.

I hope I made that coffee industrial strength.... :lol:

At least the grandsons are here to let the dog in and out - that's about a full time job! He loves being out in the country but has to come to the door frequently to make sure I am still here. I let him in, he takes a couple of laps of water, then wants out again - I'm going to put a bucket out on the porch and have younger grandson fill it with water for him in hopes that I don't have to stop in the middle of things quite so often...

Walmart run today with college age son. We got him some extras put away. We were able to each get a Clorox wipe pack as well as Clorox cleanup. Limit of one each. They didn’t get many in and we’re flying off the shelf.

I got undies while there. Hubby got antifreeze to winterize the boat. Slow and steady trying to build the preps and think ahead.

One plan for the week is a new fishing pole for me. (Off shore)

We order a lot of stuff from Walmart to have delivered here. They have been out of cheap sugar online for quite a while. Today the 10# bags were in stock and I ordered 40lbs. During the summer we go through 30 or more pounds for feeding the hummingbirds. We still had a bunch on hand but those hummers are still here and eating a lot.

As I've said in the past I've got a lot of boxed foods. Most of it is something that is in a bag in the box. Since I have some smaller bucKets I've taken the packages out of the boxes and putting the packages in buckets, of course, I'm also including the instructions for the product in the bucket.. All the same product in the bucket with a good lid that is not horrible to take off. I've simply got to get some order if for no other reason than to know what I have. Once I've gotten this done than I can count how many mylar bags of what size I need and/or canning jars. Most days I'm so worn out I can't get much done.

I changed the sheets today on our bed and my back is killing me. Tomorrow is going to be laundry day.

Some of the boxed foods I've added (and stacked up) include mac n cheese, scalloped potatoes, chicken flavored stuffing, pasta sides, a few rice sides, corn bread mix, macaroni salad etc. These are all things we almost never eat because they are unhealthy. My point in including them is to give some from time to time variety. If things loosen up and food does not get scarce we'll probably never eat any of that food. But its there if we need it.

No prepping today, but bought tomato products on sale at King Sooper's (Kroger) and at discount store Friday.

Domestic duty is a true pain for me too, Judy. Due to trauma 50 years ago and untreated injuries. Just the thought of re-organizing pantry makes my back ache................you have my empathy!!

Judy... consider also taping one of the panels from the boxes on the outside of the bucket, using some sturdy wide packing tape. When I was prepping stuff like Hamburger Helper, I did thst, and found that it got "others" to use the stuff more often than if it was just labeled with a magic marker. Probably similar psychological reasons that "generic" foods started fancying up their labels instead of just having the plain block printed labels lije they used to.

The jars seal just fine. I try to keep clean canning jars on hand all the time, so I don't have to wash a large amount to have ready when they are needed.

Of course, my method only works if you have plenty of canning jars over and above what you need for canning other things. I have hundreds of them, since my mom gave me all of hers to go with what I already had.

Our kids and grands came over yesterday (YAY, I was so happy to see those little faces) so their self quarantine is over. The adults go back to school/work this week and DH and I will be babysitting again. The grandson’s don’t go back until end of the month.

I had DH bring up some quart canning jars and 10 lbs of ground beef this morning so I’ll get the jars washed up and once the meat thaws enough to cook, I’ll get that canned up. After today I’ll have to pick and choose canning times carefully since it’s been awhile canning with a “little gets into everything baby girl” underfoot. Also want to can up some chicken breast this week. I have several packs of bone-in breasts and a few whole chickens in the freezer that I hope to get canned up this month along with some broth.

I put in a small order to WM for chicken and beef Better than Bouillon to replace what I’ll be using in my canning, a pack of combs for DH, two hairbrushes for me and since I needed to spend another $1.37 for free shipping, a pack of coffee filters for $1.52!

I have also been putting these goods in glass jars too, my issue is I have so much "stuff" to package that I'm drowning. There are days that I don't get much done, I'm tired.

I have a big stash of jars. Once I get the clutter more organized, I plan on going through the buckets and putting food in the jars. In the buckets this way the food is "at least" safer than just stacked up around the house.

At least doing it this way is quicker than doing the jars and then finding a place to store the jars, although not as long term.

Yeah, it's a lot of work. If I lived closer, I would be glad to come help.

Moved a ton of rock today. Used it to fill the low spots on the road. A couple were getting really bad.

What was fun was I got the first 1000 lbs and then shoveled it into the spots needed and went back for the next 1000 lbs, (truck is only good for 1000 lbs) and it amazed the kids loading the truck (took 3 of them with a forklift) about how little time it took for an "old man" to unload that much rock.....

Meat guy is $90-$135

I mean, I have no idea since I’m a “half hog newbie” but I’m happy with those prices!

Does that sound good, for those here who know? Sure beats grocery store meat and we’re so excited! She told me he only got the regular hog food stuff (?) fruit, veggies, and what came directly from her own feedings and scraps. I guess he loved watermelon. Lol.

Oh, wanted to add, after paying my taxes first, I saved the remainder of that 1200$ relief money to pay for this.

I thought it sounded good! Think of how much meat that is, really. She said last week he weighed 290 lbs... might be more by now.

I sure wish it was beef , sigh, but none was available. She “might” have access to some this early fall she said, but it was scarce and too much work for her to do these days. So she isn’t raising beef anymore. Bummer.
We got lucky with the pig she found!

Its something you have to come to terms with if you want farm raised meat. I always thank the animal for their sacrifice for food for us.

We had one pig that I was particularly fond of, his name was sausage, he was about 3 years old and weighed about 500 pounds. He was the last of the boars to go. We just could not keep him as a pet.

I got the roosters canned over the weekend. 7 quarts and a little left in the frig. I have 4 more on death row. Then this fall I need to begin culling the old hens.

I got the new queen bees installed. The third hive has queen cells so I am going to see how they do. I can always consolidate them later if they can't make it ok.

I put in an order to Tattler Lids. I ordered some replacement rubber rings and bulk metal bands too. They said that they are swamped with orders. Glad I got some more.

I almost forgot. The feed store owner told me he could not get any more seeds for fall planting. What he has left from spring is it. They sell bulk seed.

I canned up a few more quarts of tomatoes and another of green beans today. My tomatoes this year are a HUGE disappointment. For the first time in a very long time I'm going to have to buy tomatoes to get me thru the year. But I'm headed to the state farmers market tomorrow for those and a few other things I can't easily grow. I've never been to this one (Charlotte is closer) but I'm told we can buy straight from the vendor at wholesale price as long as we buy the case. Not a problem at all. At any rate it will get us out of the house for the day.

Psych girl, that's a pretty good price. I just paid $275 for a half, but I wish our guy would have had some. When we get a whole hog, I want everything but the squeal! Kidneys and liver go to the dogs, but im paying by the hanging weight....I want it all!! Well, not the chittlins!! Yuck!

Growing up on a farm (some people insist it was a ranch), I was always taught that all farm animals, that we intended to eat, were to be named after “food”. Not always exactly what type of food they would become, but food. Had a hog named Biscuits, another hog named Gravy, a steer name T-bone, chickens of various names, best remembered was Nugget. Kind of covertly reminding us of their future. We were taught that they should only have one bad day in their lives, and it was to be as humane as was possible. Still try to do that with the animals we raise. Except for the honeybees, it’s hard to come up with 1,000,000 names, even harder to learn to recognize them visually! Their name tags are too small to read. We just call them all “girlfriend”.

The precursor to chittlins are intestines, good to wash and use for sausage casings.
As mentioned earlier, everything but the squeal has a valid use. Maybe more so back in the-day, but I fear “the hungry times” are coming back. Prepare wisely in every way possible. Just because we don’t like it doesn’t mean it isn’t edible.

Psychgirl, we take ours to Odon Locker, up the road from Cannelburg, and they've also always been very good to work with and we appreciate the way the livestock are handled. Nothing store-bought compares to farm-raised meats; your price sounds good.

Got some meds refilled yesterday and so while at Walgreens I got some more cereal, distilled water, toilet paper, and some clearance cold meds that were "good" until the end of the year.

Today I did my monthly trek to Walmart. Got more Zest soap (think I have enough now!), more yarn (this was for special projects), more distilled water, more soda, the ever elusive Hormel tamales, pasta sauce, pasta, various rice mixes, soup, various baking mixes, powdered milk, trash bags, and they even had 3 lb bags of rice on sale for $1. I bought 4 of those as I am pretty much out of room, but I think I can squeeze those in somewhere. They still don't have any alcohol and very little in the way of cleaning supplies. I can't think of anything I am missing, but I am keeping us stocked as we are eating almost all of our meals at home and going through the groceries a little faster than normal. I have things stashed everywhere.

I also filled up another kitty litter bucket with snapped twigs for the little rocket stove. That makes six buckets put away. I also put another box of branches in the garage to dry out. They have been stacked by the driveway and have gotten wet from the storms. I don't have any more litter buckets, but they will be ready when I get some. I pick up twigs and sticks on my morning walks.

This afternoon I went to Walmart and Dollar Tree. I only intended to get a few things, which turned out to be an over flowing basket and a lot more money that I wanted to spend. Unfortunately, my attitude seems to be that what if this is the last shopping trip I make which makes me add more to my basket. The TP and paper towel aisles were in good shape, several brands of tp, including the great value brand of 1000 sheet rolls. I bought a package of 16 rolls for under 10 dollars. I did pass up paper towels. They were out of the Great Value purified cases of water, although the did have the one gallon bottles, I got four. The canned vegetables were a little sparse, but the did have some. The also had a couple of cases of mandarin oranges with no sugar added, I bought a case. They had some diced potatoes, I bought 4 cans. I bought 4 boxes of saltine crackers that I will vacuum seal in 1/2 gallon jars so they will keep an extended amount of time. The only canning jars they had were 1/2 pint, I bought a case. Last time I went I found corn starch in the hispanic section, but none today. I bought the GV brand in a canister for over a dollar, I got four. I use it for bath powder and since I've gained weight I need bath powder. I wanted baking soda, but no boxes under a dollar so I passed. They did have some in bags in the laundry section and the price seemed hight so I passed. I bought four loaves of bread, two white and two whole grain. I don't eat white and DH will not eat whole grain. We ran out of bread a few days ago and I've been making egg mcmuffins for Dh's breakfast and had no bread but I dug around in the freezer and found a package of english muffins, so I bought three packages of those to go in the freezer.

When I got home I ordered baking soda, rice and flour from walmart.com for better prices than in the store. Also, online they have had the 1/2 gallon jars in and out of stock. Today they were in stock so I ordered two cases. Yay for me.

Dollar Tree was out of the beef stew and chili that DH likes but I have plenty, at least enough for a can each every other week. DH thinks he will never eat what I do have in his life time.

I may be wrong on this but I do think the supplies in the grocery stores will get less and less the closer we get to the election. I told my oldest son the other day to buy more food (I doubt he will) and since my youngest son has yet to call me since he left his wife and children I can't caution him about it. Maybe I could text him to take the rice and beans with him since his wife would never cook them (probably has no clue how to cook beans or rice).

Walmart will not let me order sugar or flour online. I've yet to figure out why. Every time I get to the check out, it takes it off my order and tells me I have to pick it up "in store" which ticks me off to no end.

Yesterday I went with my sister to a sale her friend was having. The friends mother had passed away and the friend was selling some of her sewing supplies. I bought $75 of stuff. Material was $1-2 a yard. I got a couple of polar fleece pieces to make Christmas presents. I want to sew more. I enjoy it. I just don't enjoy having to stop and start all the time. I have a bunch of mask to make for family ASAP. The great neices will need them for school.

We have gotten 2 inches of rain this week. Hopefully the tomatoes will keep producing. I canned 6 pints a couple days ago. I want to do at least another canner of tomatoes creole before they are done. The cucumbers look about finished, but I only want some to eat fresh.

The peaches I've had resting on the counter under newspapers are ready to can, and I've got the canner, jars, etc... prepped and ready to go, so I'll get that started this afternoon. I plan to head up to the pool with the neighbor lady around 9; likely won't be home until after 11 but I need both the workout and the interaction to get my brain and body ready for the weekend at work. I've got two loads of sheets in the washer; work clothes are staged to go in after the sheets, followed by canning towels before I head to bed this evening.

Before I leave for the pool, I need to wash and box all the jars of soup, meat, and jam that I canned from the freezer issue of last weekend. I took all the ring bands off yesterday and got them washed, but the jars are still on the counter - and Hubby has been carrying some of the soup in his lunch, so I need to get them out of sight and rotated in to the pantry so he will take the earlier home canned soups instead.

I need to get out and replant the pole beans sometime today, but it is still too wet to till the garden. The tomato jungle hasn't produced very well this year, but I blame that on the weather. I'm just very grateful that we are not as dependent on it producing well as we have been in the past.

Daughter is going to bring the boys out this evening to hang out while she goes out to mow at a friend's house; they will spend the night, then I will take them home tomorrow afternoon. I will need to run up to the orchard for another half bushel of peaches sometime tomorrow or early Saturday morning - I've got a lousy work schedule for Saturday evening through next Thursday, but then have a 4 day weekend so should be able to get some canning done.

Got the final word that Hubby's big statewide match was cancelled so it looks like we can do something on my September vacation if we want. I have another vacation in mid October, but I'm not going to be comfortable going any distance from home that close to the election. A stop at my sister's house in MO is on the list, but other than that we have no solid plan other than staying out of any cities. Hubby has never been to Mt Rushmore, Wall Drug Store, Devils Tower, or Yellowstone so those might be an option. I've got my bets in on the grandsons' school shutting down in building classed by October - if not before they even start as one nearby school district has suddenly decided (after registration, of course) to do only on-line learning; so they might be with us on the vacation. I already have some worksheets and information downloaded and ready to print on Mt Rushmore and Washington, Jefferson, Roosevelt, and Lincoln. Anyone in those areas feel free to give me a heads up on anything we shouldn't miss :spns:

Your attitude is like mine, Judy. I told Cary that when we go for our next shopping trip into town, I was going to treat it like it would be our last trip for a long time. I plan to spend money out of our emergency fund to add more food, water, and try and get as many of the household items on my list as I can find. I may have to order a few of those items. I'm not putting it off any longer. My pantry room is full, and now, our bedroom has become a secondary pantry room. I'm storing things wherever I can find a place. I'm not too worried about what my house looks like anymore. At least, we will have food to eat and water to drink.

I was talking to my best friend, yesterday. She is doing the same thing. She believes that the window to buy food and such is fast closing. She is of the mind that we may only have another two weeks or so. I don't know about her timing, but I'm not waiting any longer. Monday is our shopping day, or sooner if it is warranted.

Sometime back, I think I remember someone saying that those little pocket hand warmers could be used instead of O2 absorbers? I have a case of those left from last winter, and was wondering, since I'm placing an order for more O2 absorbers. If I can use the hand warmers, too, I won't have to order as many absorbers. Anyone?
