Baking Lemon zucchini bread

2 cups flour
2 tsp. baking powder
1/2 tsp. salt
2 eggs
1/2 cup oil
2/3 cup sugar
1/2 cup buttermilk
2 tblsp. lemon juice
Zest of 1 lemon
1 cup shredded zucchini (you can peel it or use yellow squash if the green bothers you.)

Mix all ingredients together and bake in a greased 9x5 loaf pan at 350* for 45-55 minutes. When cool, drizzle with icing made from 1 cup powdered sugar and 2 tblsp lemon juice.

I have made a vanilla flavor of this (substitute water and vanilla extract for the lemon, or almond extract and sprinkle some toasted almonds on top).

Spinner everything is better with poppy seeds ;)

Thanks for the bump, Moldy - I just picked up a couple of zucchini from the neighbor this afternoon; will give this recipe a try - I love anything lemon!

And thanks for the tip on zucchini recipies :)
