I was just digging around looking for a bread maker. Historically, a loaf of bread will go bad before I finish it. OTOH, I love the taste of fresh bread. With a maker and some flour, I could make it when I need it as opposed to having to fight the zombie hordes - lol. Anyhoo, I went looking. All the reasonably priced bread makers are gone. Only the $200-$500 makers are available, and I’m not paying that. Also, the prices for the cheaper ones have been jacked way up too.

So for this, I think I’m “too late.” (If anyone has a bread maker (with instruction book) that they’d be okay selling and shipping to me, I’d love to hear from you - heh.)

Check the thrift stores. I had one I inherited from my aunt. Used it a few times and the computer chip went bad. Made in China.

Look on You Tube for the bread videos. That's what I have been doing. Made me some nice buttermilk biscuits a few weeks ago which required me to buy some fresh flour which I am now grateful for considering the local stores have no freakin bread whatsoever.

Truth be told, I used the recipe on the back of the Quaker cornmeal box, with a few enhancements. Far as weird Minnesotans go, blueberries, cranberries and wild rice are our lifeblood. Get close to The Big Lake, and add herring. ;)

Easy Cornbread

( I subbed buttermilk for the skim (ewwww) and used two whole eggs, 'cuz i have lots of eggs. Then blueberries of course.)

1 1/4c. all purpose flour
3/4 c. cornmeal
1/4 c. sugar
2tsp. baking powder
1/2 tsp. salt
1 c. skim milk (do what you think is right here..)
1/4 c. veg oil
2 egg whites or 1 egg beaten (I use two whole eggs)

Oven: 400F.
8 or 9 inch greased pan. (Cast iron works GREAT!)
Combine dry ingredients, then make a well and add separately mixed wet ones.
Mix just until dry ingredients are moistened.
Bake 20-25 minutes or dry toothpick thing. You know the drill.

I know. I always cut the sugar way down. But some people want corn muffin taste instead of cornbread I guess.
Since I was doing "sweet" (with the blueberries) instead of "savory" with maybe a bit of chopped green onion, or bell pepper, I did add some of the sugar. Cornbread is flexible that way, depending on what you are eating it with.

Thanks- I'll ;x re: weird MN foods, being of the opinion that "any" food made "for" me is a good food.
...and I chose my dairy animal breed due to it having the highest level of butterfat-
( this momma likes her milk like her men, (sweet) too!) (Nigerian dwarves 6-10%, haven't tested)

I always got mine from Goodwill. They are cheap $5 and often come with the manual. I will go check today after I get done with clients....

You don't need a bread making machine. It's not that hard to make yourself.
No you don't. But the idea of being able to put the ingredients in the mixer and set a timer to start in 5 hours so it would be fresh when you get home is just priceless.

It's a northern thing for those who grew up on Jiffy cornbread

No machine necessary. Flour, yeast, salt, water plus whatever seeds, raisins you want to throw in. I've baked 9 loaves this week, froze 7. The chickens are putting out more eggs now that we've reached the spring Equinox. If we had to, we'd live on egg sandwiches.
Made three more loaves today. I usually make a dense, whole wheat loaf with lots of seeds, oats, flax meal, etc. Today I adjusted the recipe to make a more sandwich-friendly bread: fewer seeds, added some lighter flours. Should be great for a club san!

Google "Peasant Bread". I really like this bread. No-knead, very basic ingredients, works up quickly, and the result is GOOD.

With that ratio of flour dominating cornmeal, that's not cornbread but conventional bread garnished with some cornmeal.

We don't eat bread much, but I did buy a case of jiffy cornbread mix last fall. I have a wonderful corn bread recipe from scratch but DH didn't like it and I won't make it for myself. All this bread talk is making me gain even more weight.

I have a very good no knead bread recipe that is great for sandwiches. It's called Cheddar Batter Bread. We eat more cornbread and biscuits than homemade loaf type breads, though. I do like making "sweet breads", but Cary doesn't like them much. I do, and am getting ready to start on a batch tomorrow. My no knead Aloha Bread recipe makes 3 loaves.

Yep, goodwill will have bread makers for 5 dollars. I have 2 and yes I can make bread by hand. I love homemade bread and a 1 pound loaf works great for just my husband and myself. It does not last 3 days in my house.

I know, right?? Not even a full week in SIP protocols, and already the scale and tape measure have increased! :shkr:

I use my bread machine to just do the mixing, kneading and raising. Then I take it out and bake loaves in a bread pan in the oven. Or make then into rolls.
This is how we make bread. Works good, makes all DW and I need. We do grind our white wheat for flour. Need to grind some for next week.

I'll go along with others and recommend a thrift store - although it's probably a bit too late now.

We were in the Goodwill a few months ago and I found a Sunbeam that makes a huge (2 lb.?) horizontal loaf. My son got that one ($3). I also found this amazing "Sous Vide Supreme Water Oven, SVS10LS" at the same store, about a month later. I gave $10 for it. It didn't look like it had ever been used.

If you cant find regular flour, you might look in same spot for almond and coconut flour. Make Keto bread. Doesn't require yeast or much fancy stuff. No kneading. Mix right in pan and bake.
It's an idea.
