Farm Tomatoes

As usual we planted way too many tomatoes this year, and despite all the rain we've had they are looking great. This in addition to the canned tomatoes we get in commodities. We really don't use tomatoes for much. We do love fresh peeled and sliced tomatoes and this year I'm determined to fry some green tomatoes.

I made some spaghetti the other day with crappy canned (in a can) spaghetti sauce and DH said it was too tomatoie. I agreed. We had left overs that I will probably make some kind of casserole with lots of cheese (which we are blessed to get in commodities). Plus I've dehydrated tomatoes in the past and ended up giving them to the goats, which they love, because I really didn't know what to do with them. I use to use canned tomatoes when I was raising my children, but my DH doesn't much like the things I use to cook.

What I would like to know is what to do with all the canned and fresh tomatoes? Suggestions will be appreciated.

there's nothing better than a fresh tomato sliced about 3/8 thick drizzled with some olive oil salt to tases and some granulated garlic sprinkled over it. as an alternative - take that tomato prepared that way add a slice of fresh mozzarella cheese and a basil leaf to it . . . or . . . take that tomato prepared that way toast a couple of pieces of bread and put some mayonnaise on them - GREAT sandwich

Oh my. You are all so lucky! Tomatoes are my favorite and very hard to grow here without a greenhouse and still not a lot of production. Sigh. Enjoy what you have!! <3

I haven’t had fresh tomatoes since I came to Texas. If you wanted to send me a few, you’re close enough that they’d probably survive. Tomatoes are my favorite thing in the world.

Well, you should send them all to me, of course. Or, consider selling them locally, or bartering them? Here in my neck of the woods, its done online, easily and often.

I'm a huge fan of Ratatouille variations in the oven for any and all summer surplus, though I can see id not want to serve it up as a main meal to my man. Raggedymans solution is also delish, and you can't go wrong with olive oil and veggies.

Dont forget your v8 drink options, can can and use as drink or base as needed. Also, catsup and bbq sauces, and salsas.

Still looking forward to the first mater sammich of summer here - had the first pot of turnip greens this week, and the first salad with home grown greens this week too. Be a bit before the maters set fruit however, they got their first dose of Epsom salt last week (for the magnesium) because they are blooming like crazy.

A tomato and onion sandwich is good using thick chewy homemade bread. Use lots of mayo and if you like, a slice or two of mild Swiss cheese. My sister prefers Miracle Whip and adds a sliced hard-boiled egg.

Tomato, onion and cucumber all diced very fine makes a good salad with a splash of honey/apple cider vinegar mix as a dressing. This doesn't even need any greens. With enough of the vinegar/honey mixed into it, it even freezes well and tastes like a summer garden when it's thawed and eaten in mid-winter.

It’s way to hot in the Austin area to grow tomatoes without an air conditioned greenhouse. In summer, night time temps never get below about 77, with daytime highs near or above 100 for months at a time. If you get them in the ground here by mid-February, you stand a chance. By May 1st, forget it.

Instructions

Bring to a boil vinegar, sugar, salt, garlic, allspice, clove, peppercorns and cayenne in a large stock pot.
Add tomatoes, onion, and apple, reduce heat to low.
Simmer, uncovered, 2 hours or until thick, stirring frequently.
Puree until smooth.
Bring back to the boil, and pour into hot sterilised jars.

At one stage in my life, I loved to make spaghetti dishes. I used to do 40k round trips to stock up on homemade Italian pasta sauces that were made by an Italian lady and she also grew everything she used in the sauces she made.

I would second that! Maybe Summerthyme will post it again :-) Aside from using tomatoes in sandwiches, tacos, etc., we always freeze as many as we can whole given the available freezer space. Fresh tomato soup in the winter is wonderful!

I use a lot of tomatoes here. Never had TOO many. A jar of homemade canned salsa is always open in the fridge, for a snack, or to put on breakfast eggs. Homemade salsa is so much better than store bought, it isn't even the same animal. I use home canned stewed tomatoes in many hotdish recipes, chili, Brunswick stew, beef soup, lasagna, etc. Something that is delish with fresh or home canned is simple Spanish rice, or how about all of those amazing Louisiana Cajun/Creole dishes. Same for tomato sauce...and making tomato sauce is a really good way to reduce mega-volumes when you have bushels of tomatoes staring you in the face in the fall. I cook it down in my mom's huge old electric frying pan on low (no need to worry about it burning). Can get it so thick it's almost like tomato paste, then can it.

OTOH, if you guys don't eat tomatoes...maybe just don't grow so many. ;) I'm sort of chuckling about your comment of the spaghetti sauce being too tomato-ey. Guess I never had that experience. As for fresh tomatoes...the way I was raised (German grandpa was an incredible gardener)...fill one hand with a big fat tomato, and the other with a salt shaker. That's what's for lunch and supper during fresh tomato season. Eat 'em like apples.

I both can and dehydrate my excess tomatos. Its a shame that fresh tomatos only last a month or 3 as I love them on sandwiches.

Can tomatos basically go into some type of sauce. Spaghetti, salsa or chili sauce

Dehydrated tomatos I add as an accent to food. Note I keep my dehydrated tomatos in ziplocks in the freezer for ease of storage and use. Couple of examples every morning I throw a small handful of dehydrated tomatos into my omelet. As an additional topping on homemade pizza. Little in my indian butter chicken. Added to my spaghetti sauce to increase the chunkiness. Stews, etc

But I grow about 100 tomato plants so I've learned what to do with them.

Grow your tomatos in the winter. That is what I did when I lived in south florida. Started the seeds in October and other then having to provide them protection a couple of times due to cold I was harvesting in Feb and March.

I thought I was the only one in the whole world who knew about tomatoes and onion sandwiches. Spies are everywhere, and I don't have an Alexia. BLT's are also great, or for a prepper SLT's (Spam). Tomatoes and salt is also a go.

Due to the heat we eat a lot of salads in the summer, all with tomatoes. To include Taco Salad's with tomatoes diced, and salsa.

Being a prepper you can "Can" chili, stews, tomato soup, salsa, pasta, by the pint or quart.

BTW you can mix like half and half home made pasta with bought pasta, to help with taste, and to make the pasta go further.

ETA: you can also make your own Rotel. Being in LA you might can some gumbo.

Judy, I just so happened upon a video for a 20-minute Spaghetti Sauce (Louisiana style) using only fresh tomatoes WITHOUT PEELING! I don't have the tomatoes right now, but when I get them, I'm going to try it!!!

(The cook is a Louisiana woman I followed, who reported about the Morganza Spillway that was on the Southern flood thread.)

Here is the link for that recipe. Having detested Campbell's bland tonato soup all my life, this one surprised me... it's delicious. I make at least 5 gallons every summer when all the veggies it calls for are ready.

Slightly off topic here, for Dennis' benefit.

Take a Cuc. and peel. slice very thin, as if you were making dill pickles. Place in bowl. Southernbreeze says she doesn't measure anything. However it looked to me like she used about 1/3 vinegar to 2/3 water enough to cover the Cukes. SB also uses some sugar to overcome the bitterness of the vinegar. Little pepper. Place in frig to chill.

Depending on how much you like each of those ingredients you could go more or less.

Thank you so much! For some reason Campbell's gives me migraines, always has, must be an additive of some sort. Annie's Tomato Bisque is really good but pricey. I still prefer my own cooking with our own homegrown vegetables.
