my family has been on a poached egg kick for a couple of weeks, as a result of 1], economizing on our use of butter [used to fry eggs]; or 2], trying to eliminate grease from our diet, [bacon grease to fry eggs].
while the kids were home for the holidays, this is how I've stumbled upon making them. it's a one-shot deal, everybody's is done at once, and it works for me.
I take a stainless steel skillet [not the cast iron I usually cook with] and put about 1 and 1/2 inches of water in it, and get it boiling. meanwhile, I've got all the eggs out of the shells, and in a bowl. when the water is boiling, I just pour the eggs in and stir it around a little with the spatula, mainly to keep them from sticking to the bottom of the pan.
after about 2 to 3 minutes, I pour off eggs, into a large strainer, with a pot underneath. I put the bowl on the counter, with a big spoon, and everybody "dips" out how much they want.
I've been putting the egg "water" into the chicken slop bucket.
however, it smells good. kind of "eggy", if you know what I mean.
has anyone ever come up with egg juice water? And if so, what did you use it for? or, what do you think it could be used for?
the only thing I can come up with is bread baking.
